this week i was looking for semi healthy recipes when i came across Tescos's Kedgeree recipe on their website and gave it a go

What i like about this recipe is that it is fully customisable to your tastes so if you want smoked mackerel instead of haddock , make it happen . if you want to up the spic level then go for it - be the the creator.
if i was to make this kedgeree again i would further simmer the rice and stock to gain an enhanced flavour profile .

1 onion
2 tbsp vegetable oil
2 tsp curry powder
1 mug of basmati rice
1 reduced-salt stock cube, (chicken, vegetable or fish)
2 mugs of water

Kedgeree is such a wonderful word, it gives nothing away of its meaning, but if you do know what it means, it conjures up the delicious breakfast dish so loved in Britain. It is an unusual dish for breakfast as it consists of curried rice, smoked fish, boiled eggs, parsley and lemon juice. Not the usual British breakfast. Though, it is the origins of the dish which gives meaning to it as it is steeped in British and Indian history.
Kedgeree History
Kedgeree may be considered a traditional British breakfast dish but its roots are well bedded in Indian cooking having started its life as khichari, a humble dish of rice and lentils. Thanks to the melting pot of food of British Raj and the colonization of the sub-continent, the dish was taken, adapted (originally there was no fish) and turned into something more familiar to those serving in India, and it returned to these shores with them.
The British unable to simply leave a dish alone, added the fish part to give the dish a protein element and as fish is a popular breakfast dish (Kippers) suited the British palette. In the UK the fish used is smoked haddock, in India this was not possible and any fish used would have been fresh and because of the searing heat was eaten at breakfast as any later in the day most likely would have gone off.
Cooking Kedgeree
Given the bringing together cooked rice, eggs and fish, this dish could (in the wrong hands) be heavy, lumpy and stodgy - not a great start to any day. In the right hands though it can be a light and extremely flavorsome dish. Cook the rice in advance and make sure it is dry. Use fresh free range eggs, fresh parsley and chop only when needed and most certainly never use dried. Make sure the fish you use is as fresh as possible (even though it is smoked it can still deteriorate quickly and lose its liveliness). Assemble all your ingredients ready to go and cook at the last minute, Kedgeree kept warm soon loses its vigor.
Kedgeree is More Than a Breakfast Dish
Yes, that is the origin of the dish but it is a hearty dish and makes a wonderful brunch dish, and seriously, can also be eaten for lunch or dinner.

Classic Kedgeree recipe- British Breakfast
Traditionally a British breakfast dish that was bought over from India during the reign of Queen Victoria. This recipe is delicious any time of the day and not just for breakfast.
My wife has requested this recipe for a long time, I didn't do it as i thought it was too simple to show however I'm glad i did. The flavour that this dish delivers is amazing and a must try.
What you will need -
Curry paste/curry powder
1 onion
2 cloves of garlic
1 inch ginger
Smoked fish ( i used haddock )
300g - 400g pre cooked cold long grain or basmati rice
500ml Milk
2-3 hard boiled eggs - I cooked mine for 6 and a half minuets in boiling water
salt and pepper to taste
1tbsp olive oil to fry
Its as simple as that.

The recipes -
The pastry -
2 1/2 cups flour
1/2 cup sugar
2 sticks (8oz) unsalted butter
2 egg yolks
1/4 cup heavy cream
1 egg - for glazing
Blend the flour, sugar and butter until fine crumbs, add the egg yolks and cream, blend again until combined.
The mincemeat -
3 cups raisins
2 cups grated apple (skin on)
1/2 cup unsalted butter
1/2 cup sliced (slivered) almonds
1 cup brown sugar
1/2 cup sugar
1 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp ground nutmeg
1/2 tsp mixed spice (all spice)
1 orange - zest only
1 cup brandy
Mix all the ingredients together in a large pan and cook for 5-8 minutes. Set aside to cool.
Brandy butter -
4 oz unsalted butter
4 oz powdered sugar (icing sugar)
1/4 cup brandy
Beat together the butter, brandy and sugar until combined and no lumps. Pipe onto parchment paper and refrigerate for at least 4 hours.
1/4 cup powdered sugar for dusting the mince pies
1 cup powdered sugar for blowing at Winston :)
