Today's video is yet another Christmas cookie recipe! Be sure to make plenty of these little guys because not only are they super easy to make but they are literally everyone's number one choice!
Ingredients:
1/2 cup chocolate chips
4 tbs. butter
2 tsp. corn syrup
1 cup unsalted room temp. butter
1/2 cup powdered sugar
1 1/4 cup flour
3/4 cup cornstarch
Directions:
Start off these easy cookies by creaming the butter until it's nice and light and fluffy about 1-2 minutes. Add the remaining ingredients and mix until combined. Form the dough into a log and wrap it in plastic. Place it in the fridge and firm until it hardens up about 15-20 minutes. In a small bowl melt together the chocolate chips and butter mixing every few seconds being careful the chocolate doesn't burn. Once it's nice and smooth add the corn syrup and mix together. Cover and place to the side until ready to use. Once the dough is ready, cut it into 1 inch slices and press a thumbprint down the middle. Bake 325 F. 15-20 minutes. Once the cookies have cooled, add a dollop of chocolate to the top and Enjoy!

Ingredients
Makes about 30-35 cookies
1 1/2 cups (190g) all purpose flour
1 tsp (5g) baking soda
1/2 tsp (3g) salt
1/2 stick (60g) unsalted butter, room temperature
1 cup (240g) smooth peanut butter
1/2 cup (100g) packed dark-brown sugar
1/2 cup (100g) granulated sugar
2 eggs
1 tsp (5g) vanilla extract
For rolling the cookies
1/2 cup (100g) granulated sugar
Chocolate Ganache
4 oz (120g) semisweet chocolate
1/2 cup (120g) whipping cream
1. In a bowl whisk together the flour, baking powder and salt. Set aside.
2. In another bowl add the peanut butter, butter, granulated sugar and dark brown sugar. Using an electric mixer or a wooden spoon , mix well until creamy.
3. Incorporate vanilla extract and eggs one at a time. Gradually add flour mixture, and mix until just combined.If the batter is too soft to roll into balls, refrigerate for about 30-60 minutes
4. Preheat oven to 350 F (180C). Line 2 baking sheets with parchment paper.
5. Take equal portions of dough using an ice cream scoop and form into balls. Roll them into sugar and place on the prepared baking sheets.
6. Use your thumb to make an indentation into the center of each cookie.
7. Bake until slightly golden for 10-12 minutes. Transfer cookies to cooling racks to cool completely. While still warm press again the center of each cookie if necessary
8. While they cool prepare the chocolate ganache. Heat the cream in a small saucepan. When the cream just begins to boil at the edges, remove from heat and pour over the chopped chocolate. Let sit one minute, then stir until smooth. Let it cool for 5 minutes before filling the cookies.
9. Fill the cookies with chocolate ganache and let it set before serving.They can also freeze well up to 2 weeks.

In this video, I show you how I make these deliciously soft and chewy double chocolate Hershey's Thumbprint cookies. These cookies are like a cookie and brownie combined into 1! These cookies are perfect for the Holiday season, for parties and potlucks and even as gifts! I guarantee everyone will love these. See the recipe below:
INGREDIENTS
1/2 cup unsalted butter, softened
1/2 cup granulated sugar + 3 tbs to roll the cookies in
1/2 cup brown sugar, packed
1 egg
2 tsp vanilla extract
1 + 1/3 cup all purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 cup sweetened cocoa powder
21-24 Hershey's Kisses
INSTRUCTIONS
1. In a large bowl, cream the butter, granulated sugar and brown sugar
2. Once creamed, add in the egg and vanilla extract. Mix until combined
3. Set wet mixture aside and in a separate bowl, combine the flour, baking soda, salt and cocoa powder. Mix until combined
4. Pour the dry ingredients into the wet ingredients and fold using the spatula until a cookie dough forms and no flour is left in the bowl
5. Roll cookie dough using a small ice cream scoop or with your hands
6. Chill your cookies in the freezer for 15 mins and preheat your oven at 350F for 15 minutes
7. Once chilled, roll the cookies into granulated sugar and bake for 5-8 minutes (only roll the cookie dough you're going to bake right away)
8. Out of the oven, cool for 2-5 minutes and push a Hershey's kiss into the centre
9. Enjoy!

Makes 24 cookies
Ingredients:
1 Egg
1 egg yolk
3/4 cup (150g) Sugar
1/2 cup + 1 tbsp (135ml) Oil
1 teaspoon Vanilla extract
2 cups (250g) Flour
1 teaspoon Baking powder
1/4 teaspoon Salt
1 Egg white
100g Crushed hazelnuts, roasted
100g Dark chocolate/ milk chocolate
Directions:
1. Preheat oven to 160C (320F). Line 2 baking tray with parchment paper and set aside.
2. In a large bowl place 1 egg, 1 egg yolk and sugar, whisk until light and pale.
3. Add oil, vanilla extract and whisk until combined.
4. Add flour, baking powder, salt, and stir until dough is formed.
5. Shape small balls, dip each ball in the egg white, then cover with chopped hazelnuts. Arrange the balls on prepared baking tray. Slightly flatten the balls and then make an indentation with your thumb or with a back of a spoon into each ball.
6. Bake for 14-15 minutes, or until golden.
7. Chop the chocolate, place in a heatproof bowl and melt in the microwave in 30 seconds intervals until melted.
8. Fill each cookie with melted chocolate and allow to cool.

2 egg whites
3/4 cup sugar
2 tbsp cocoa powder
2 tbsp chopped chocolate or chocolate chips
Instructions for making double chocolate meringue cookies:
- First in a large bowl add your egg whites
- Then add in your sugar to the bowl
- Now mix everything together with a whisk until meringue forms
- Now you can add in your cocoa powder
- And also add your chopped chocolate or chocolate chips
- Now mix everything together with a whisk again
- Spoon your cookie dough onto your baking sheet
- Bake in the oven at 300F for 25 minutes
- Your chocolate meringue cookies are now ready to eat
