Been a minute since I've celebrated Taco Tuesday.. Threw these together in under an hour. All natural simple flavors working together to please the taste buds and fuel the body. ????????
FULL RECIPE ⬇️
INGREDIENTS
Chicken
- 1.5 lb Boneless Skinless Chicken Thighs
- 1 packet of @sietefoods Taco Seasonings
- Few tbsps of @chosenfoods Avocado Oil
- 1/2 cup fresh OJ
Salsa
- 1 medium diced red onion
- 1 cup diced cherry tomatoes
- ~1/3 cup fresh chopped cilantro
- Juice of 1/2 lime
- Salt & pepper to taste
- @sietefoods Almond Flour Tortillas
- @traderjoes Spicy Cashew Butter Dressing
DIRECTIONS
1. Prep Chicken and place in fridge for at least 20 min or as long as you want to marinate. Can do it hours before, the day before, it's up to you.
2. Prep salsa before cooking chicken and place in fridge.
3. In a large pan on medium high heat add some avocado oil. Once hot add in the chicken. Cook for 7-10 min per side or until thickest part is 165 degrees internal. Remove and lest rest for ~10 min
4. Chop up your chicken, and build your tacos.

Chicken And Avocado Tacos With Creamy Cilantro Sauce Mexican Chicken Tacos Recipe
Chicken and avocado tacos with creamy cilantro sauce -Chicken and avocado tacos are so easy and so quick to make which makes it is perfect for get-togethers, parties, weeknight dinners or anytime you are craving tacos! This Mexican Chicken Tacos Recipe is very popular, packed with many flavors.
Ingredients
For the Chicken1 pound chicken breasts cut into bite size pieces
2 tbsp olive oil
2 clove garlic crushed or minced
1 tbsp chili powder
1/2 teaspoon ground cumin
1/4 teaspoon onion or garlic powder
1/4 teaspoon kosher salt
1 tbsp olive oil
squeeze of lime optional
cilantro lime sauce
1/2 cup sour cream or Greek Yogurt or Mayo
1/4 cup cilantro
1 clove garlic
1 teaspoon lime juice
salt and pepper to taste
To Assemble
2 avocados, sliced
6-8 small tortillas corn or flour
Instructions
To Make Chicken
Chop 2-3 medium chicken breasts into small bite-size pieces. In a medium bowl whisk together olive oil, garlic, chili, cumin, onion powder, and salt. Add in chicken and toss to coat completely. Cover and refrigerate for at least 10 minutes or up to 48 hours.
To cook: Heat a large heavy-duty or cast iron skillet on high heat for 1 minute. Add the olive oil and chicken. Cook chicken in a skillet over medium-high heat until charred and cooked through, 8-12 minutes. Turn off heat and finish with a squeeze of lime (optional).
To Make the Cilantro Lime Sauce
Add the sour cream, cilantro, garlic, lime juice and salt & pepper to blender or food processor. Blend for 30 seconds to 1 minutes or until creamy.
To Assemble:
Char tortillas on stove-top if desired. Add some of the chicken to the warmed tortillas. Top with avocado and cilantro sauce.

Ingredients
1/2 cup onion chopped
1 no. red pepper chopped
1 no. green pepper chopped
2 tbsp olive oil
2 cloves garlic smashed.
1 tsp paprika powder
1 tbsp tsp cumin powder
500 gms chicken mince
12 corn taco shells
Salsa
1 large tomato
1 medium onion
2 tbsp fresh parsely
2-3 green chillies
1 tsp tabassco
1/2 lemon (juice)
Salt
Guacamole
1 ripe avocados
½ lime
Salt as required
2 tbsp fresh cream
Method
- Chop the veggies
- In a pan heat some olive oil and then add the veggies and saute them
- Add minced chicken and cook it on a high flame
- Add salt, paprika and roasted cumin powder
- Roughly chop the garlic and add it into the pan and stir it properly
- Once the chicken is cooked properly turn off the flame and keep it aside to cool
- Chop onion,green chillies and tomato and mix them together
- Also chop some parsley, salt and juice of lemon mix it and add tabasco
- In a bowl add the avocado, salt, cream and juice of lemon
- Whisk it all together
- Shred the lettuce leaves
- In a taco shell put lettuce leaves, chicken filling, salsa and guacamole
- Chicken Mexican Taco is ready to be served.

INGREDIENTS
FOR THE FILLING
1 c. black beans, cooked
1 c. canned corn
1 4-oz. can green chiles, divided
1 c. shredded rotisserie chicken
1 c. shredded cheddar, plus more for topping
1 package Taco Seasoning
2 tbsp. fresh cilantro, plus more for topping
3 ripe avocados
FOR THE DRESSING
1 c. ranch dressing
1/4 c. lime juice
1 tbsp. fresh cilantro
1 tsp. kosher salt
1 tsp. fresh ground black pepper
DIRECTIONS
1. Heat broiler. In a large bowl, combine black beans, corn, 1/2 can green chiles, Tyson Grilled & Ready Pulled Chicken Breasts, cheddar, taco seasoning, and fresh cilantro. Stir until combined.
2. Halve and separate three avocados, removing pit and hollowing out insides. Mash insides in a small bowl and set aside.
Place avocado boats face up and fill each with 1/3 cup of filling.
3. Sprinkle with more cheddar and more fresh cilantro, then broil until cheese is melty, about 2 minutes.
4. Make the dressing: In a medium bowl, combine ranch, lime juice, remaining green chiles, cilantro, salt, and pepper and stir to combine. Fold in mashed avocados and mix until smooth.
5. Remove avocado boats from oven and transfer to serving dish. Drizzle with dressing and garnish with more cilantro, if desired. Serve immediately.
