What I love about this breakfast is that it’s not only healthy and hearty, it’s delicious and quick to make (if you’re organised). The eggs are fried but kind of poached and steamed at the same time. So they remain soft and delicate like poached eggs with the flavour of fried eggs. Adding the chopped chives to the raw whites gives the eggs a great flavour and an interesting look as the chives set in the cooked whites.
For me, I can cook this in the time it takes to toast the bread, around 4 to 5 minutes. I’m still waiting for someone to invent a 30 second toaster! I use a nice rustic or sourdough bread, (see my easy to make bread recipe).
A must, is a cold freshly squeezed orange juice, so place those oranges in the fridge the night before, then freshly squeeze them.

Ingredients
6 pieces Crackin' Chicken, cut into slices
1/2 cup All-Purpose Stir-Fry Sauce
2 tablespoons avocado oil (optional)
1/2 small head Napa cabbage, cored and sliced thin
1/2 small head red cabbage, cored and sliced thin
2 medium carrots, peeled and julienned
3 scallions, thinly sliced on the bias
1/2 cup cilantro leaves, roughly chopped
1/2 cup drained canned Mandarin oranges in 100% juice
1/5 cup toasted almonds slivers
2 tablespoons toasted sesame seeds

Not-So-Boring Thai-Spiced Chicken Mango Salad with Honey-Sesame Dressing | TOM TO TABLE
Don't skip over this because of the word salad. Salad is one of those dishes people love or hate. I have learned to love salad when it's brimming with delicious flavors and vegetables. This Thai-spiced chicken mango salad from Drool Worthy Daily stands alone as a perfectly filling dinner salad. The honey-sesame dressing coats all the ingredients nicely and deliciously.
Not-So-Boring Thai-Spiced Chicken Mango Salad with Honey-Sesame Dressing
Recipe adapted from
INGREDIENTS:
- Makes 4 servings
For the salad:
1 lb. chicken breast
2 Tbs. red curry paste
2 Tbs. soy sauce
1 Tbs. light olive oil
1/2 tsp. kosher salt
1 cup raw peanuts
8 cups spring green mix
2 mangoes, peeled and cubed
2 avocados
1 medium or 2 small carrots, shredded
2 small oranges, peeled and chopped
4 scallions, chopped
1 cup cilantro, chopped
1 red bell pepper, thinly sliced
For the honey-sesame dressing:
3 Tbs. honey
1-1/2 Tbs. red wine vinegar
1/4 cup mayonnaise
1 tsp. Dijon mustard
1/3 tsp. sesame oil
Directions:
1. Butterfly the chicken breasts.
2. In a 1-gallon ziplock bag, add the chicken, red curry paste, soy sauce, olive oil and salt. Place in the fridge while you prepare the other ingredients.
3. In a small saute pan on medium heat, add the peanuts. Stir until peanuts are roasted. Set aside.
4. In a salad dressing shaker or small bowl, combine the honey sesame dressing ingredients together.
5. Preheat the oven to broil.
6. Place the chicken on a foil-lined baking sheet. Broil for 7 minutes on each side. If you have a grill, use that.
7. Chop the chicken into cubes.
8. To serve, split the ingredients into 4 bowls. Add the spring green mix, mangos, avocado slices, oranges, scallions, cilantro, red bell pepper, peanuts, and carrots. Top it all off with chicken and drizzle on the dressing.
