How To make Chicken Alla Valdostana
2 large chicken breasts
2/3 cup chicken stock
flour 4 thin slices prosciutto
1/4 cup olive oil
4 thin slices fontina cheese
1/4 cup (1/2 stick) butter
salt and freshly ground pepper
Flatten chicken breasts, cut in half, and dust lightly with flour. = Saute in a skillet with oil over moderately high heat for 1 minute on = each side until golden brown. Transfer to a plate, discard oil in = skillet. Add butter and broth into the skillet and heat mixture over = moderate heat. Return chicken to skillet, top each piece with prosciutto = and cheese and cook the mixture, covered, until the cheese is melted and = bubbly. Transfer the chicken to a heated platter, reduce sauce over = moderately high heat until it is thickened and season with salt and = pepper. Pour the sauce over the chicken.

PREPARAZIONE
Unite il pangrattato con il parmigiano. Impanate i filetti di pollo nel mix di pangrattato.
Trasferiteli sulla teglia e conditeli col sale. Versateci sopra un filo d’olio e infornate a 190° per 10 minuti.
Successivamente poggiate su ogni filetto il prosciutto e la mozzarella. Cuocete per altri 10 minuti.

Ingredients for 4 portions:
4 small skinless boneless chicken breast cut and pounded thin
about 1.1/4 lb (550gr)
6 thin slices imported ham
6 slices of fresh mozzarella
2 tablespoons of olive oil
2 tablespoons of butter
2 tablespoons all-purpose flour
1/4 cup chicken broth (100ml)
1/4 cup of white wine (100ml)(optional)
salt and pepper to taste
1 tablespoons chopped
fresh parsley
Directions:
In a large skillet over low heat, add olive oil and butter.
Lightly flour the thinly sliced chicken breasts,
shaking off excess flour, add the chicken
to the skillet and saute until lightly browned,
about 2 minutes each side.
Once the chicken is cooked, remove and set aside on a plate.
Discard the frying oil, and increase heat to medium low.
Return the chicken back to the skillet,
add and let melt a tablespoon of butter,
Add the wine (optional) or chicken or vegetable stock.
Increase heat to medium high. and simmer until reduced by 1/4,
about 2 minutes. Add chicken stock, parsley, salt / pepper,
and simmer until sauce reduce, about 5 to 6 minutes,
a bit longer if needed.
After 5 to 6 minutes reduce heat to low.
Top each chicken breast with a
slice of imported ham and a slice of fresh mozzarella cheese.
Cook just until the cheese lighly melts.
Once done, transfer chicken to individual plates or serving trays.
Serve with a side of steamed or sauteed vegetables
and rice pilaf, or mashed potatoes.
Serve right of way and steeming hot
