How To make Chicken & Red Bell Pepper Bolognese
1 tb Olive oil
1 sm Onion, chopped fine
1 md Garlic clove, chopped fine
1/2 lb Ground chicken breast
1/2 c Chardonnay or other dry
- white wine 1 cn Salt-free whole tomatoes
- (16-ounce) 1 tb Double-concentrate tomato
- paste 1 tb Fresh basil leaves, finely
- shredded 1 tb Fresh Italian parsley,
- finely chopped 2 ts Sugar
1 ts Fresh rosemary leaves,
- finely chopped 2 md Red bell peppers, roasted,
-peeled, stemmed, seeded, -and coarsely chopped, -juices saved Cooked pasta of your choice In a large saucepan or skillet, heat the olive oil with the onion and garlic over moderate heat. When they sizzle, add the chicken and saute it, stirring and breaking up the meat with a wooden spoon, until it begins to brown, 5 to 7 minutes. Add the wine and stir and scrape well to deglaze the pan. Add the tomatoes, breaking them up with your hands, and stir in the remaining ingredients. Simmer the sauce until thick but still slightly liquid, 20 to 25 minutes. Spoon over cooked pasta -- spaghetti, fettuccine or medium-sized tubles, shells or other shapes are recommended. Directions for roasting bell peppers: ~------------------------------------ Place the peppers in a foil-lined baking sheet in a 500 degree oven. Roast until their skins are evenly blistered and browned, about 25 minutes, turning them 2 or 3 times so they roast evenly. Remove them from the oven and cover them with a kitchen towel. When the peppers are cool enough to handle, pull out their stems, peel away their blackened skins; open the peppers up; and remove their seeds, using a teaspoon to pick up any stray ones. Take care not to lose any of the peppers' juices, which are also very flavorful. You might want to pour them through a fine mesh strainer to remove any seeds or bits of skin.

• 1 pound sweet Italian sausage
• 1 pound lean ground beef
• 1 large white onion, diced
• 1/4 cup finely diced carrot
• 1/4 cup finely diced celery
• 5 cloves garlic, minced
• 6 ounce can tomato paste
• 28 ounce can crushed tomatoes
• 1/2 cup white wine
• 1 cup beef broth
• 1/2 cup chopped fresh basil (optional)
• 1/4 cup chopped fresh parsley (optional)
• 1 teaspoon dried oregano (optional)
• 1/2 teaspoon salt
• 1/4 teaspoon ground black pepper
• 1 cup whole milk
✅Instructions
00:00:13 - Preparing ingredients for Classic Bolognese Sauce
1️⃣ 00:00:40 - In a large pot over medium heat, add in ground sausage and ground beef. Use a spoon to break up the meat into small pieces. Brown 5 minutes. Drain off any excess grease.
2️⃣ 00:01:05 - Add in onion, carrot, and celery and cook another 5 to 7 minutes until onions are soft and meat is cooked through.
3️⃣ 00:01:34 - Add in garlic and tomato paste and garlic and cook 2 minutes, until tomato paste starts to toast.
4️⃣ 00:01:46 - Pour in crushed tomatoes, white wine, beef broth, and milk. Stir in fresh basil, parsley, and oregano (if using) and season with salt and pepper. Herbs are optional for additional flavor, but not a part of traditional bolognese sauce.
5️⃣ 00:02:17 - Stir well and bring to a simmer. Reduce heat to low and simmer, covered, 1 to 4 hours, stirring occasionally. Flavors will continue to develop the longer you allow the sauce to simmer, so simmer for up to 4 hours if time permits.
6️⃣ 00:03:04 - Taste and add more salt and pepper to suit personal taste preferences.

Chicken Bolognese
WARNING: Not for the purist Italians! hahaha As I'm not a big fan of beef mince, I've been playing with this recipe for ages, it's a great form of protein with using an alternative, yep chicken breast mince. It's so good, packed full of flavour and for me, a lot nicer texture. I've made up a really nice sauce with some red wine and the adding of a small amount of dark chocolate, really works in this sauce.

EASY MINCED MEAT SAUCE RECIPE /BOLOGNESE SAUCE (THE NIGERIAN WAY)/ RAGU SAUCE
In this video I will show you how to make an easy Bolognese (minced meat tomato sauce) recipe that is sure to impress. its super easy to make but very delicious. This Minced meat sauce/bolognese pair very well with any kind of pasta as well as rice.
Ingredients for Bolognese/minced meat sauce.
1 onions
3 cloves garlic
400g minced meat
2 carrots
100g tomato paste
2 canned tomatoes (400g)
1 teaspoon oregano
½ teaspoon thyme
1 teaspoon white pepper
Seasoning cube/powder to taste
Salt to taste
¼ cooking oil
3-4 scotch bonnet peppers
½ cup red bell pepper
½ cup green bell pepper
¼ cup Chopped parsley
6-8 Basil leaves
