I needed to use up some ingredients and this healthy cookie was just perfect. It's satifying and a perfect snack for any time. Use whatever nuts and seeds you have on hand. Double or Triple the recipe for larger quantities. Enjoy!
Vegan Oat Cookies Healthy | Easy Gluten-Free Trail-Mix Cookie Recipes | EASY RICE COOKER RECIPES
NOTES:
* 1 cup = 250 ml
* My rice cooker capacity = 1 litre or 5 cups
* Please READ Important TIPS at the end of each video
INGREDIENTS:
• 1 cup (100g) ROLLED OATS
• 1/2 cup (55g) ALMOND FLOUR (ground almonds)
• 1/4 cup (25g) GROUND FLAX SEEDS
• 1 tbsp (12g) CHIA SEEDS
• 1 tsp (5g) BAKING POWDER
• 1 tsp (3g) GROUND CINNAMON
• 1/4 cup (70g) MASHED BANANAS (1 large)
• 1/4 cup (80g) MAPLE SYRUP
• 1/4 cup (60ml) ALMOND MILK
• 1/4 cup (60ml) COCONUT OIL
• 1/2 cup (65g) DRIED CRANBERRIES (no sugar added)
• 1/4 cup (35g) SUNFLOWER SEEDS
• 1/4 cup (40g) PUMPKIN SEEDS
• 1 tbsp (10g) BLACK SESAME SEEDS (optional)
• 1/4 cup (15g) UNSWEETENED SHREDDED COCONUT FLAKES (desiccated coconut)
HOW TO MAKE IT:
1. Whisk together the first 6 ingredients
2. Whisk together the next 4 wet ingredients then add the dried cranberries; to soak up some of the liquid
3. Pour the wet into the dry and fold to incorporate. Fold in sunflower seeds, pumpkin seeds, black sesame seeds and shredded coconuts until well combined
4. Lined your pot/pan/cookie sheets. Shaped your cookies into whatever size you like. I'm using a 1 tablespoon size for my cookies
5. Bake in the rice cooker for 1 bake cycle (30 min). There is no raw ingredients to cook through; just need to bind together
AIR-FRYER BAKING:
Bake in 375F (190C) for 5 minutes then turn the cookies over and bake another 4 minutes. Yours may need more or less time. Just keep an eye on it or it will burn quick
OVEN BAKING:
Bake in pre-heated oven of 325F (160C) for about 15-20 minutes. Ovens varied so check after 18 minutes and bake a little longer as needed

Ingredients:
3/4 cup (1 1/2 sticks) butter, softened
1/2 cup sugar
1 cup light brown sugar
2 eggs, at room temperature
1 teaspoon vanilla extract
2 cups rolled oats
1 1/2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon salt
1/4 cup milk
2 cups whatever nuts or dried fruit of your choice (I use 1/2 cup each of raisins, coconut, peanuts, and chocolate chips)

PANTRY RAID! | Oatmeal Trail Mix Cookies
Learn to make chewy oatmeal cookies loaded with whatever you have in your pantry! Customize these cookies to make them your own.

✅{RECIPE NAME} INGREDIENTS:
➤3/4 c whole wheat flour
➤3/4 c all-purpose flour
➤1/2 tsp baking soda
➤1/2 tsp baking powder
➤1/2 tsp kosher salt
➤1/4 tsp cinnamon
➤1/2 c (1 stick) unsalted butter, room temperature
➤3/4 c granulated sugar
➤1 large egg
➤3 tbsp pure maple syrup
➤2 tsp pure vanilla extract
➤3/4 c rolled oats
➤1 1/3 c trail mix or any combo of: chopped toasted nuts, chocolate or peanut butter chips, M&Ms, or dried fruit
✅DIRECTIONS:
1. Place a rack in the center of your oven and preheat the oven to 375 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
2. In a medium bowl, whisk together the whole wheat flour, all-purpose flour, baking soda, baking powder, salt and cinnamon.
3. In the bowl of a stand mixer fitted with the paddle attachment or a large mixing bowl, cream the butter for 30 seconds. Add the sugar and beat on medium speed until light and fluffy (1 to 2 minutes). Scrape down the bowl once or twice as needed.
4. Add the egg. Beat on medium low speed, just until blended.
5. On low speed, beat in the maple syrup and vanilla.
6. With the mixer on low, slowly add the dry ingredients, stopping as soon as they disappear.
7. Switch to a rubber spatula or wooden spoon. By hand, stir in the oats and mix-ins, until evenly distributed.
8. Portion the dough by two tablespoonfuls, shape into a ball (each ball will be about 2 inches across), and place on the baking sheet, leaving 2 inches of space between the cookies.
9. Bake for 8 to 9 minutes, until the tops are BARELY golden. The centers will still seem soft and underdone (they will set up more as they cool. Do not over bake!). Let the cookies cool on the baking sheet for 1 minute, then carefully transfer to a wire rack to finish cooling. Repeat with remaining cookies, letting the sheet cool completely between batches.
