Soft and Chewy Chocolate Cookies with Coconut Filling | Super Soft and Delicious
These Chocolate Cookies by themselves are so soft, chewy, and chocolaty, and the coconut filling is very goey and the whole combination is really delicious! It's easy to make the recipe. The chocolate outside doesn't only look nice but it makes the cookies more flavorful and chewy and keeps the cookies soft and delicious for the longest time. You can save them at room temperature in an airtight cookie jar or in the fridge if it's too hot for the chocolate! But they taste the best in-room temperature! I hope you enjoy this recipe!

Recipe for 12 big cookies:
200g Flour | 1 +2/3 Cup
35g Unsweetened Cocoa Powder | 1/3 Cup
100g Icing Sugar | 1Cup
1tsp Salt
1 + 1/2tsp Baking Powder
100g Butter | 7 tbsp
1 Egg
15ml Milk | 1 tbsp
Coconut Filling
100g Shredded Coconuts | 1 Cup
90g Sweet Condensed Milk | about 1/3 Cup
Melted Milk Chocolate to Decorate (100g)

Chewy Coconut Cookie Bars
Chewy coconut cookie bars. Coconut dream bars. Magic cookie bars. Hello Dolly bars. Whatever you call them, they are one of my favourite desserts ever! They are chewy, crunchy, smooth, creamy, salty and sweet. Everything you want in a dessert!! They are super easy to make and use limited ingredients. They freeze well and are great to have in the freezer when you need a sweet treat.
Recipe:
2 cups digestive biscuits (or graham wafer)
1/4 cup white sugar
1/2 cup melted butter
1 can sweetened condensed milk (300ml - 14oz)
2 cups unsweetened dessicated coconut
1 1/4 cups of chocolate chips
3 tbsp milk

2 cups of Graham cracker crumbs
1 and 1/3 cups flaked coconut
1 cup chopped walnuts
1 10 oz can of sweetened condensed milk
Mix all ingredients together and pat it into a sprayed 8x8 inch baking pan and bake in a 350 degree oven for about 40 minutes.
Nothing is simpler than this recipe but it is big when it comes to flavour! You will want to try this! Although they are bars, this might be a great desert when having company any time of the year! Decorate with a vanilla pudding or ice cream!

✅HEALTHY GRANOLA BARS INGREDIENTS:
➤2 c old-fashioned rolled oats
➤3/4 c roughly chopped nuts like almonds, walnuts, pecans, peanuts or a mix
➤1/4 c sunflower seeds or pepitas or additional chopped nuts
➤1/4 c unsweetened coconut flakes
➤1/2 c honey
➤1/3 c creamy peanut butter
➤2 tsp pure vanilla extract
➤1/2 tsp ground cinnamon
➤1/4 tsp kosher salt
➤1/3 c mini chocolate chips or dried fruit or nuts
✅HEALTHY GRANOLA BARS DIRECTIONS:
1. Place a rack in the center of your oven and preheat the oven to 325 degrees F. Line an 8- or 9-inch square baking dish with parchment paper so that two sides of the paper overhang the sides like handles. Coat generously with nonstick spray.
2. Spread the oats, nuts, sunflower seeds, and coconut flakes on a rimmed, ungreased baking sheet. Toast in the oven until the coconut looks lightly golden and the nuts are toasted and fragrant, about 10 minutes, stirring once halfway through. Reduce the oven temperature to 300 degrees F.
3. Meanwhile, heat the honey and peanut butter together in a medium saucepan over medium heat. Stir until the mixture is smoothly combined. Remove from the heat. Stir in the vanilla, cinnamon, and salt.
4. As soon as the oat mixture is finished toasting, carefully transfer it to the pan with the peanut butter. With a rubber spatula, stir to combine. Let cool for 5 minutes, then add the chocolate chips (if you add the chocolate chips immediately, they will melt).
5. Scoop the batter into the prepared pan. With the back of a spatula, press the bars into a single layer (you also can place a sheet of plastic wrap against the surface to deter sticking, then use your fingers; discard the plastic prior to baking).
6. Bake the healthy granola bars for 15 to 20 minutes: 20 minutes will yield crunchier bars; at 15 they will be slightly chewier. With the bars still in the pan, press a knife down into the pan to cut into bars of your desired size (be sure to pick a knife that will not damage your pan—I typically cut into 2 rows of 5). Do not remove the bars. Let them cool completely in the pan.
7. Once the bars have cooled completely, use the parchment to lift them onto a cutting board. Use a sharp knife to cut the bars again in the same place, going over your lines to separate. Pull apart and enjoy!
