How To make Branding Iron Chili
3 lb Sirloin rough ground
2 lb Pork rough ground
4 c Stewed tomatos
3 Onions chopped
4 Jalapenos seeded &
-chopped 5 tb Cumin
3 tb Tabasco sauce
2 oz Sour mash whiskey
16 oz Beer
2 ts Salt
1 c Tomato paste
1/2 ts All spice
5 Garlic cloves minced
2 Bell peppers chopped
3 c Tomato sauce
2 tb Corn oil or peanut oil
Heat the oil in a large, cast iron skillet. Cook the meats, onions, garlic and Bell peppers until meat is browned and the onions are transluscent. In a large pot bring the beer and whiskey to a slow boil. Add the meat mixture, tomato sauce, tomato paste, and all spices except 1 T of cumin. Reduce the heat, cover and simmer for 1 hour stirring frequently. Remove the lid and cook for 30 minutes more continuing to stir frequently. Add the remaining cumin and serve. Ribs always turn out GREAT with Apple Chipotle Glaze!!!! This is some of the footage we shot last summer. These are the ribs I prepped in the other rib videos. A friend I used to work with custom made the branding iron from stainless steel bar stock.

This chili recipe is a World Champion Chili Recipe from the 2017 Terlingua Chili Cook-Off. This is the championship-winning recipe from Brent Allen. In the video, we show you how to make a competition style chili (which doesn't allow for fresh ingredients) but we do not follow the recipe to a T, so please check out Brent Allen's competition-winning chili recipe here:

There are several different ways to make a red chili recipe and this is a competition championship chili recipe so it does not include many of those raw ingredients found in a home version of the traditional comfort food chili recipe such as onions or peppers. In competition, you can't add raw ingredients so you must use powders. If you want to try this at home -- which I recommend because it is DELICIOUS -- you can buy all of the chili powders I named online.
