INGREDIENTS FOR 6 PERSONS
Edible crab with an exotic riviera
500 gr shelled crab
2 cl vodka
1 fresh cheese
1 mango
1 passionfruit
1 cucumber
1 red onion
1 kiwi
2,5 dl olive oil
6 dill sprigs
2 green lemons
2 kumquats in slices
Salt, pepper
White balsamic vinegar
Caster sugar
100 young shoots
Flowers
4 slices of bred
Stuffed saddle of lamb
For the lamb
1 saddle of lamb (2 kg)
1 shallot
20 gr butter
3 dl meat juice
Salt, pepper
3 garlic cloves
1 green cabbage
300 gr mushrooms
200 gr cooked chestnuts
5 cl sunflower oil
1 onion
300 gr red kuri squash
100 gr celery
1 thyme sprig
For the stuffing
200 gr chicken breasts cut into small pieces
1 egg white
2 dl fresh cream
50 gr parsley and chopped tarragon
Salt, pepper
For the vegetables
Salt, pepper
1 green cabbage
300gr mushrooms
200gr cooked chetsnuts
5cl sunflower oil
1 onion
300gr red kuri squash
100gr celery
1 thyme sprig
100gr butter
Coffee flavoured soufflé
For the zabaione
6 yolks
100 sugar
15 gr soluble coffee
8 cl water
20 cl liquid cream
3 gelatine leaves
For the French meringue
3 egg whites
100 sugar
1 pinch of salt
For the decoration
50 gr raisins (macerated in rum)
8 biscuits
For the cream
15 cl liquid cream
Some coffee beans
Creamy Mushrooms | Jamie Oliver
This is a brilliant principle recipe for creamy mushrooms. Stir through pasta here but so good on toast, on steak and on so many other things. If you like mushrooms then check this out!
