- 2 eggs
- 1 cup unsweetened almond milk
- 1 tbsp melted coconut oil (more for your pan)
- 3/4 cup tapioca flour
- 1/4 cup coconut flour
- 1 tbsp bocha-sweet (or other paleo sweetener)
- 1 pinch of salt

A traditional Jewish blintz souffle is a delicious and decadent dish that is perfect for any special occasion. It is a variation of the classic blintz, a thin, crepe-like pancake that is typically filled with cheese or fruit and served as a dessert or breakfast dish.
To make a blintz souffle, the blintzes are baked in a custard-like mixture made with eggs, milk, and sour cream. The result is a rich and creamy dish that everyone loves.
Blintz souffle is a perfect dish to serve for brunch, as it can be made ahead of time and then reheated just before serving. It can easily be made with store bought blintzes of any variety, but we made ours with our new favorite chocolate tahini blintzes and topped it with some shaved chocolate.
INGREDIENTS
4 chocolate tahini blintzes
¼ cup sour cream
Juice from half an orange
2 teaspoons maple syrup
¼ teaspoon vanilla
1 egg
½ tablespoon room temperature butter
Pinch of salt
Sugar for sprinkling
Garnish: Chocolate
INSTRUCTIONS
Preheat oven to 350℉. Place blintzes in a 5x5-inch pan.
In a medium bowl, mix together sour cream, orange juice, maple syrup, vanilla, egg, butter and salt. Pour mixture over blintzes.
Sprinkle with sugar. Bake, uncovered, at 350℉ for 30 minutes, until puffed and golden.
Before serving, shave chocolate over top for a presentation.
