How To make Birria (Seasoned and Baked Meat)

It is a really rustic dish. Usually a whole goat or lamb, although in some places just the offal, is seasoned with a paste of ground spices and chiles and cooked in a pit barbecue. As you wander around Guadalajara at night, you can see that tacos of birria head the list of antojitos on the street-side stands and always appear prominently on the Sunday menus of the smaller regional restaurants. Here is a family version of birria, with the variety of chiles used in Zacatecas, rather than the plain chilacate or ancho used in Jalisco. One day ahead: 2 lamb shanks A veal breast A lamb breast 3 pounds loin of pork 2 tbs salt 6 chiles anchos 3 chiles guajillos 10 chiles cascabel 18 peppercorns 4 whole cloves 1/4 tsp oregano Scant 1/4 tsp cumin seeds 1/4 cup vinegar 2 tsp salt 6 cloves garlic, peeled 1/2 small onion Directions: There will be approximately 6 to 7 pounds of meat. Slash the meats in several places down to the bone and rub the salt well into it. Meanwhile, prepare the chili paste. Heat the comal and toast the chiles lightly, turning them from time to time so that they will not burn. Remove the veins and seeds. Put the chiles to soak in hot water for about 20 minutes, then transfer with a slotted spoon to the blender jar, add the rest of the ingredients, and blend to a smooth sauce. Cover the meat thickly with the paste and set it aside to season for about 18 hours. On serving day: 1 1/2 cups water The meat Flour and water paste 2 pounds tomatoes, broiled 1 cup onion, finely chopped 1/2 tsp oregano Preheat the oven to 350 degrees. Put the water into the bottom of a large Dutch oven or casserole with a tightly fitting lid and place the meat on a rack so that it is just above the water. Seal the lid with a paste of flour and water and cook for about 3 1/2 to 4 hours, by which time the meat should be almost falling off the bones. Strain off the juices from the bottom of the pan, cool, and skim off the fat. There should be about 2 cups of juices left- if not, make it up to 2 cups with water. Blend the tomatoes to a smooth sauce. Put the sauce and the skimmed juices from the meat into a saucepan and bring to a boil. Serve each portion of mixed meats in a deep bowl. Pour 1/2 cup sauce over the meat and sprinkle with the chopped onion and oregano. Eat with tortillas.

INGREDIENTS
cooking oil to brown meat
4 lbs (1.81 kg) beef chuck roast meat
1 tsp salt
1/2 tsp black pepper
1/2 small onion
1 cup (236.5 ml) water for the pan
3 extra cups (710 ml) of water for Instant Pot
**CHILE PUREE
1 chipotle chile in adobo sauce
6 guajillo chiles
1 ancho chile
1 pasilla chile (add 1 cup water to the blender for puree)
1 chipotle chile in adobo sauce
2 1/2 cups (591 ml) water (for boiling and soaking chiles)
2 Tbsp (20 g) beef bouillon powder
2 tsp Mexican oregano
1 tsp dried thyme
1/8 tsp (adjust to your preference)
1/8 tsp (adjust to your preference)
2 bay leaves
6 cloves garlic
**For The Quesa Tacos
rendered fat from birria broth
cooking oil
corn tortillas
10 oz shredded Oaxaca cheese

Ingredients
Birria de Res/ Beef Ingredients
7—8 Cups of Hot Water
4-Pounds of Chuck Roast (Diezmillo en troso or Chuck Steak)
1-Large Onion or 2-Medium
1-Whole Garlic
10-Medium Bay Leaves
8-Carrots ( add half the carrots first. This will help enhance the broth flavor.
8-Guajillo Chiles or California/ New Mexico Or 1/4 Cup views chili powder
3- Tablespoons Chicken Boullion
1/2 Tablespoon Oregano
1-Teaspoon of Salt (adjust to taste)
Views Birria Chili Oil - (6:25)
Grind all the dry spices in your grinder of choice
4-Guajillo Chiles + 1 extra for infusing
2-Bay leaves
1/2- Tablespoon Oregano
1/2-Tablespoon Chicken Bouillon
1/2-Teaspoon Pepper Corn or 1/2-Teaspoon Black Pepper
1/4- Teaspoon Ground Clove or 2-Cloves
1/2-Teaspoon Granulated Garlic Powder
1/4-Teaspoon Sugar
1-Cup Canola or Vegetable Oil
For Spicy oil add
10- Chiltepines or 1/2- Teaspoon Cayenne Pepper
4-Puya Chiles
Toppings
1/2- Chopped White Onion
1/2-Bunch Chopped Cilantro
1/4-Finely Chopped Green Cabbage
Lemon or lime to taste
Birria Tacos Ingredients
1-Cup Mozzarella or your favorite melting cheese such as Munster and Oaxaca

I am so excited for todays recipe, it's soooo delicious!!! This Mexican traditional dish originates from Jalisco which is where my mom was born. It is typically made with goat meat, throughout the years more people make it w beef as its just as delicious and more accessible. This is a type of dish you make for special occasion in Mexican tradition, such as wedding, Quinceañeras, baptisms etc...today I am sharing my recipe. I hope that you love it!!! INGREDIENTS:
To start the broth-
1 large beef bone cut into pieces
2 beef neck bones
2-3 lbs Chuck Roast
2 Tbls of Chicken Bouillon
2 Tbls of Salt
5 garlic Cloves
1 White onion
For the Sauce-
13 Chiles Guajillos or 2oz
3 Chiles Anchos
3 Chiles Pasilla
3 Roma Tomatoes
5 Garlic Cloves
5 whole cloves
4 Bay Leaves
1/2 Cinnamon Stick
20 whole peppercorns
1 1/2 tbls of Oregano
1 1/2 tbls of ground cumin
1 1/2 tbls of onion powder
2 tbls of Paprika
1 1/2 tbls of salt
2 tbls of chicken Bouillon
1/4 cp of Apple Cider Vinegar
Toppings-
Diced white onion & Cilantro, Lime (enough for however many people your feeding) ;)
