2 Onions; chopped
1 Celery; finely chopped
3 Garlic cloves
1 Beef, ground, lean; broiled
2 Tomatoes, plum italian
-(canned, reserve liquid) - chopped 2 Tomato sauce
12 Beans, kidney red
- cooked and drained 12 Beans, pinto
- cooked 2 Sugar, granulated
3 Bay leaves
3 Allspice, whole
1 Chili powder
1 Oregano, dried
1/2 Pepper, black
-freshly ground 1/4 Cumin, ground
1/4 Pepper, red ground
In medium nonstick skillet, heat oil, add onions, celery, and garlic; cook over medium heat until softened, about 2 minutes. Place vegetables and remaining ingredients in slow-cooker; stir to combine. Cook on low setting 4 hours.

1/2 cup of onion powder or onion flakes (dry)

One of my favorite cold weather meals is chili. It’s so easy and quick to make; not only that, it’s healthy and delicious. I’m always trying out new recipes with different ingredients. Here are three of my favorite chili recipes; one traditional version made with beef, another with turkey and butternut squash; and the last one is a vegetarian chili. Each one is perfect!

Chili Recipe:
Olive oil
1 onion, diced
1 red pepper, diced
1 lb ground beef, I used 90/10
3 - 3 1/2 Tbs chili powder (to taste)
2.5 Tbs cumin
2 Tbs sugar
1 Tbs oregano
3 garlic cloves, or a Tbs ground garlic
1/2 tsp salt
4 Tbs tomato paste
1 28 oz can diced tomatoes
1 15 oz can tomato sauce
1 cup beef broth
1 1/2 cans no salt added black beans
*If you are using low sodium beef broth, or salted beans you will probably want to adjust the added salt.
*If you prefer a spicier chili you can add cayenne.

Veggie and Chicken Sausage Sheet Pan Meal Recipe:
You can add any veggies you'd like, and any sort of sauce. Here is what I used.
1 package apple chicken sausage
2 onions
1 1/2 zucchinis
1 pack of cherry tomatoes
1 bag frozen butternut squash
Olive oil, butter
Season with: Salt, pepper, garlic powder, oregano, thyme

THE BEST INSTANT POT BEANLESS CHICKEN CHILI
Hi! Today I am excited to share with you one of my families favorite fast, easy, and healthy dinners. When I don’t have to fight my kids to eat...I know I have a winner. My oldest request this Beanless Chicken Chili at least once a week. I love that I can just cook it fast in one pot in my pressure cooker. In this video I am not using an Instant Pot, but all pressure cookers work in a similar way. So use what ever you have. I love my Cuisinart Electric Pressure Cooker.

Beanless Chicken Chili:
3 lbs bone chicken breast (fresh or frozen)
2 bell peppers diced (any color)
1 med onion (diced)
6 cloves of garlic (minced)
5 tsp. ground cumin
2 tsp. dried oregano
3-4 tsp. chili powder
2 tsp. kosher salt
1/2 tsp. black pepper
6 cups chicken broth
juice of 1 lime
garnish: Greek yogurt, sour cream, cilantro, avocado, lime wedges
1. Select Saute' on pressure cooker
2. Add oil and Saute' peppers, onion, and garlic until tender (about
5 minutes)
3. Add seasonings and saute' 1 more minute
4. Press 'Cancel' add chicken and chicken broth
5. Select Manual on the Instant Pot or high on another pressure
cooker for 20 minutes for fresh chicken (22 minutes for frozen)
6. Lock lid. Turn vent to Pressure or Sealing
7. When cook time is up..you can do a natural release for 5-10 mins
8. Chop chicken
9. Garnish and serve
