How To make Benne Seed Cookies
12 tb Butter
1 c Sugar, brown
1 Eggs
1 c Flour
1/2 ts Baking powder
1 ts Vanilla extract
3/4 c Sesame seeds
Preheat oven to 325. Cream butter until soft, then gradually beat in sugar and egg until mixture is fluffy. Combine flour and baking powder; stir into butter mixture. Add vanilla and sesame seeds and mix well. Drop dough by teaspoonfuls onto greased cookie sheets, about 1-1/2" apart. Bake 12-15 minutes, until cookies are light brown. Let cookies rest a minute, then remove immediately from baking sheet. If cookies harden before removal, return to oven for a minute to soften. Benne Wafers
Anna from our Reference department (Hopewell) demonstrates making benne wafters. Traditionally, the Bantu tribe from West Africa, thought the benne plant brought good luck. Benne (sesame) seeds are said to have made their way to America by way of slave ships. While this recipe is based on King Arthur Baking Company's recipe, variations can be found in books from MCLS' collection, such as The Gourmet Cookie Cookie Book by the editors at the former magazine, Gourmet, as well as Toni Tipton-Martin's Jubilee: Recipes from Two Centuries of African American Cooking.
Ingredients:
8 tbsp unsalted butter, room temperature
1 c brown sugar, firmly packed
1/4 tsp salt
1/4 tsp baking soda
1 tsp vanilla extract
1 lg egg
1 c all-purpose flour
1 c sesame seeds, toasted

South Carolina Benne Wafers
1 Cup White Sesame Seeds (4 oz)
6 Ounces Unsalted Butter
7 ½ Ounces Light Brown Sugar
1 Egg, large
1 ½ teaspoons Vanilla Extract
4 ½ Ounces All Purpose Flour
¼ teaspoon Baking Powder
½ teaspoon Salt
1.Toast sesame seeds on a half sheet baking pan lined with a silpat or parchment paper at 325 degrees for about 10 minutes until golden brown, let cool.
2. In a medium bowl stir together seeds, brown sugar, flour, baking powder & salt with a spatula.
3. In a stand mixer with the paddle attachment, beat the butter until light, add egg & vanilla, add dry ingredients and stir to combine.
4. Scoop batter onto a half sheet baking pan lined with parchment paper (don’t use a silpat, they spread too much), bake at 325 degrees for about 6 - 8 minutes until deep golden.
