1 lg Egg
1 lg Egg white
1 c Granulated sugar
2 tb Vegetable oil
1/2 c Lowfat cream cheese
Not nonfat cream Cheese spread 1 tb Orange juice
2 ts Orange rind
1 3/4 c All-purpose flour; u
-nbleached Or cake flour 1/2 ts Baking soda
1/4 ts Salt
2 tb Poppy seeds
Recipe by: The New Dr. Cookie Cookbook Preheat oven to 350 degrees; coat 2 cookie sheets with nonstick cooking spray. Beat the egg, egg white, sugar and oil with an electric mixer until smooth. Add the cream cheese, orange juice and orange rind and beat again. Add the flour, baking soda, salt and poppy seeds; beat until well mixed. Drop the batter by rounded teaspoonfuls 2 inches apart onto the cookie sheets. Bake for 10 to 12 minutes, or until the cookies are lightly browned. Cool on wire racks. Lemon Poppyseed Pancakes With Lemon Maple Glaze
Pancake Ingredients:
1 Cup Flour
1 Cup Buttermilk
1 Egg
1 Tbsp Butter (melted)
1 tsp Vanilla
2 Tbsp Poppyseeds
1 Lemon Zested (about 1 Tbsp)
1-1.5 Tbsp Lemon Juice
1/2 tsp Baking Powder
1/4 tsp Baking Soda
2 Tbsp Sugar
Salt (a pinch)
Butter or oil (for cooking the pancakes)
Blueberries
Raspberries
Lemon Maple Glaze ingredients:
4-5 Tbsp Powdered Sugar
1 Tbsp Lemon Juice
1/4 Cup Maple Syrup
Instructions:
Combine all the glaze ingredients in a bowl and whisk until combined. If you want a thicker glaze add more powdered sugar. (NOTE: for a less “sweet” option, add a little lemon juice to your maple syrup and leave out the powdered sugar).
In a large bowl combine all the dry pancake ingredients including the lemon zest and poppyseeds. Mix until combined. Next add the buttermilk, egg, vanilla, lemon juice, and melted butter. Whisk until a smooth batter is formed.
In a large pan on medium heat, add a little butter or oil. Cook the pancakes one at a time with a 1/3 Cup of batter for each pancake.
Serve with blueberries, raspberries, and some of the lemon maple glaze on top.

1/2 cup of butter
1/2 cup of sugar
1 egg
Lemon peels
1 tbsp. of lemon juice
1 tbsp. of food coloring
1 tbsp. of salt
1 tbsp. of starch
1 cup of flour
Directions for the lemon cookies.
1- In a large bowl combine butter and sugar then mix.Add an egg while you keep mixing.
2- Peel the lemon into the bowl.Add lemon juice, food coloring, salt, starch and at last, flour.
3- Mix the ingredients all together until the mixture thickens.
4- Scoop balls of dough from the bowl and place them onto the tray.Bake them at 356°F/180°C for 30 minutes.

1 tbsp. of butter
1/2 cup of starch
1 tbsp. of oil
Lemon peels
1 tbsp. of poppy
1 cup + 1 tbsp. of flour
Directions for the poppy seed cookies
1- In a large bowl combine butter and starch and beat the mixture.
2- Add oil, peel a lemon inside then add poppy and flour one by one.Mix all together.
3- Take pieces of the dough, round them up with your bare hands an place them onto your tray.
4- Flatten the balls of dough with your hands.Bake them at 356°F/180°C for 30 minutes.
