Authentic Thai Recipe for Panang Beef Curry
If you've been following my recipes lately, then you'll remember seeing how I made up some homemade panang curry paste to store in my freezer. In this recipe I show you how to use some to make an excellent beef panang curry over steamed rice. Panang is one of the most popular types of curry in Thailand, and because it is generally considered to be more mild than other curries, it can be enjoyed by people who do not normally eat spicy foods. Panang has the distinct flavors of mace, cardamom, cumin, and coriander seed. It has rich golden orange to brown color, depending on the kind of meat used.

Ingredient List for my Panang Beef Curry:
1 Cup thinly sliced Beef Steak
2 Cups Coconut Milk (Divided, reserve 2 - 3 teaspoons)
2 Tbsp Panang Curry Paste
2 Tbsp Coconut Sugar
1 Cup Thai Sweet Basil
1/2 Cup Pea Eggplant
2 Mild Chilies (1 red, 1 green)
3 Kaffir Lime Leaves
2 tsp Thai Fish Sauce (use only if needed)
Directions:
1: Heat 1/2 the coconut milk in a large wok until bubbling. Cook until reduced by half, then add the curry paste. Cook until smooth and oily.
2: Add the sliced beef and fry until nearly brown, then add the other half coconut milk.
3: Add green chili, kaffir lime leaves, and pea eggplant. Cook for 2 minutes.
4: Remove from heat, stir in the basil, serve with rice. Garnish with basil, red chili, and kaffir lime slivers.

A really zingy beef curry made with coconut milk and cream. It has a deliciously rich taste to happy the whole family.
Ingredients
Beef 1 ½ kg (boiled)
Oil ¼ cup
Onion 1 (sliced)
Dried round red chilies 4
Green chilies 3
Peanut 2 tbsp
Ginger 1 piece
Garlic 7 cloves
Coriander seeds 1 tsp
Lemon juice 2 tsp
Basil leaves few
Brown sugar 1 tsp
Curry paste 1 tbsp
Salt to taste
Coconut milk ¼ cup
Cream ¼ cup
Garlic rice for serving
Cooking Directions
Heat oil in a pan, fry onion and remove.
Add red chilies, green chili, ginger, garlic, coriander seeds, lemon juice, sugar, peanut, basil, curry paste and salt. Stir it.
Now add beef, coconut milk and cream; cook for 10 minutes. Then add fried onion and cook for 2 minutes.
Dish out and serve with garlic rice.
Note: At the end check spices and adjust chili taste according to taste by adding curry paste.

A delicious Curry is truly a great recipe to know to make, it can be relatively cheap and easy to pull off you just need a little patience when using tougher cuts of beef. This Panang curry is one I think every aspiring home cook should have up their sleeve ready to deploy at a moment's notice.

Homemade curry paste recipe:
1 cup rough chopped shallots
2-3 sticks of fresh lemongrass
1/3 cup ginger or galangal
10 cloves peeled garlic
4 dried ancho chilis
4 guajillo chilis
1 tsp shrimp paste
Zest of 2 limes or 2-3 kefir lime leaves
1/3 cup cooking oil
2 tsp salt
Panang beef curry recipe: for 3-4 pounds of beef
1 tsp coriander seeds
1 tsp cumin seeds
2 tsp lime zest
2 13 1/2 oz cans coconut milk (reserve 2 tbsp for garnish)
3 tbsp fish sauce
6 tbsp curry paste
1 tbsp coconut or palm sugar
3 tbsp chunky peanut butter
salt to taste
Garnish with slivers of chili and lime zest (also kefir lime leaf)
