How To make Bean and Cashew Nut Salad
1 c Dried lima beans
-- soaked overnight OR... 30 oz -canned lima beans
1 c Blackeye peas
freshly cooked or canned 2 Celery sticks
:
finely chopped 1 sm Red sweet pepper
seeded and finely chopped 2 tb Roasted cashew nuts
:
(Or more to taste) 2 Green onions; chopped
1 tb Tomato sauce (ketchup)
1 Garlic clove; crushed
Salt and pepper; to taste 1/4 ts Cumin or jeera, ground
3 tb Balsamic or wine vinegar
6 tb Olive oil
In a large bowl, mix the drained beans with the celery and sweet pepper. Roast the cashew nuts, in a dry frying pan, until browned. Put on paper towels and allow to cool. When cool, toss into the beans with the green onions. Mix the tomato sauce, garlic, salt, pepper, cumin, vinegar and olive oil together well. Pour over the beans and mix well. Allow to stand for about an hour, before serving.

Ingredients:
1.5 cups of chicken thighs
0.5 tsp ginger paste
0.5 tsp garlic paste
0.5 tsp black pepper
Less than 0.5 tsp salt
0.5 tsp soy sauce
1.5 tbsp all purpose flour
1 tbsp corn starch
1 medium sized egg
2 small pieces of lemon
0.5 cup carrots
0.5 cup red onion
3/4 cup green pepper
3/4 cup red pepper
3/4 cup yellow pepper
3/4 cup cucumber
3/4 cup of tomato
3/4 cup cashew nut
3 tbsp sweet chili sauce
3 tbsp ketchup
1 tbsp soy sauce
1 tbsp sesame oil
Directions:
1. Cut chicken thigh and marinate in ginger paste, garlic paste, ground black pepper, chili powder, soy sauce, all-purpose flour, corn flour, egg and lemon juice. Let chicken rest for 15 minutes.
2. Cut carrots, onions, bell pepper, cucumber, tomato, lemon and cashew.
3. In a pan of hot oil, lightly fry cashew nuts and take out.
4. In the same pan, fry chicken until cooked.
5. In a pan with little oil, put vegetables, ground black pepper and mix and soften for 5 mins.
6. Add sweet chili sauce and sugar and take out of pan.
7. Mix cucumber, tomato and chicken together in a large bowl.
8. Enjoy!
Thai Cashew Chicken Stir Fry
Cashews are a favourite in stir fries all across Asia, and the Thai do it best! Really try to use raw cashews if you can, pan roasting them brings out super flavour. But if you only have roasted cashews, that's fine too!
Use as much chilli as you want… or not. Terrific whether it's spicy or mild!

For Chicken Marination:
Boneless Chicken (Breast or Thigh): 300 g
Ginger Paste: 1 Tsp
Garlic Paste: 1 Tsp
Red Chilli Powder: 1 Tbsp
Lemon Juice: 1 Tbsp
Light Soy Sauce: 1 Tbsp
Corn Flour: 3 Tbsp
Flour: 1 Tbsp
Egg: 1
Salt to Taste (I used 1 Tsp)
Cooking Oil to Fry: 2 Cups
Cashew Nut: 1 Cup
For Sauce:
Sweet Chilli Sauce: 2 Tbsp
Tomato Ketchup: 3 Tbsp
Sweet Soy Sauce: 1.5 Tbsp (Optional)
Light Soy Sauce: 1 Tsp
White Vinegar: 1 Tbsp
Orange Juice: 2 Tbsp
Olive Oil: 1 Tbsp
Sugar: 2 Tbsp (According to Taste)
Black Powder: 1 Tsp
Salt to Taste
Vegetables (As per your Choice):
Bell Pepper/Capsicum: 1 Cup
Cucumber: ½ Cup
Tomato: ¼ Cup
Carrot: ¼ Cup
Onion: 2 Tbsp
Green Chilli: 2-3 (As per your taste)
Coriander/Cilantro: 1 Tbsp

3 Millet Salad with Green Beans and Cashew Nuts
This salad features 3 different millet types and is easy to make. You do need some patience to get the millet soft but it's worth it. Green beans, spring onions, cashew and a good serving of parsley make this salad a must! For best results leave in your fridge for at least a day.
