12 Tortillas; * see note
3 c Pinto beans, canned; rinsed
2 c Brown rice, cooked
1 c Green onions; chopped
Enchilada sauce: 2 c Tomato sauce; ** see note
3 c Water
1/4 ts Garlic powder
1/2 ts Onion powder
3 tb Chili powder
4 tb Cornstarch; *** see note
Preparation Time: 2:07 This may be made without the brown rice; use 5 cups mashed cooked and drained beans instead. The sauce can also be used in other Mexican recipes. To make the enchilada sauce combine all ingredients in a saucepan and cook, stirring constantly, until the mixture boils and thickens, about 7 minutes. Preheat the oven to 350 degrees. Spread 1 cup of the enchilada sauce in the bottom of a covered casserole dish. Take one tortilla at a time and spread some beans, rice, and scallons down the center. Roll up and place seam-side-down in the casserole dish. Repeat until all ingredients are used. Pour the remaining enchilada sauce over the rolled-up tortillas, cover, and bake for 30 minutes. Calphalon 12 inch skillet
INGREDIENTS----------------
2 Lbs 80/20 ground Chuck
1 diced yellow bell pepper
1/2 medium diced onion
2 large garlic cloves (minced)

This Cheesy Burrito Casserole is the ultimate homemade Tex Mex recipe. It's loaded with beef, beans, onions, corn and seasonings for an incredible homemade meal ready in 30 minutes.

Ingredients
1 pound ground beef
1 small onion chopped
10 oz canned black beans drained
2/3 cup corn
¾ cup salsa
1 tsp dried oregano
1 tsp cumin powder
1 tsp garlic powder
salt & pepper to taste
8 flour tortillas 8-inch size
2 1/2 cups shredded cheese mixture of cheddar and jack cheese
Serving - optional
chopped green onions optional
salsa
guacamole
sour cream
Instructions
Preheat oven to 350°F. Grease a 13 x 9 inch baking dish with nonstick cooking spray and set aside.
Place a large nonstick or cast iron skillet over medium-high heat. Add the ground beef.
Stir for 3-5 minutes until the beef is mostly browned. Strained out grease that accumulates.
Add chopped onion, and cook until soft.
Add in black beans, salsa and corn. Add oregano, cumin, garlic powder and salt & pepper. Stir for about 3 minutes.
Spoon about ½ cup of beef mixture to the bottom center of a flour tortilla. Roll up into a burrito shape according to the video.
Place the filled burritos into the pan, seam side down so they don't unravel.
Fill the pan with 8 burritos, and then sprinkle the shredded cheese on top of the burritos.
Bake 18-20 minutes until the cheese is fully melted.
Sprinkle chopped green onions on top. Serve warm and enjoy!

Beef: 1.5 LB. BROWNED GROUND CHUCK (DRAIN BEEF)
ADD:
1 CUP HERDEZ SALSA (MEDIUM HEAT)
1 TSP. CHILI POWDER 1/4 TSP. CUMIN
1 TSP. SALT
1/4 TSP PEPPER
Cheese Sauce:
Combine:
2 CUPS SHREDDED MEXICAN BLEND CHEESE,
3/4 CUP HALF AND HALF,
1/4 CUP WATER.
Microwave on 1-minute intervals mixing with fork until creamy.
Put in liquid measuring cup for easy pour.
Onion & Peppers:
SLICE WHOLE ONION IN THIN SLICES,
SLICE WHOLE BELL PEPPER IN SLICES,
Sauté in 3 tbsp. olive oil on low heat for 10-
12 minutes. Salt and Pepper.
Beans:
2-3 CANS OF RED KIDNEY BEANS-
Put in skillet - warm. Add
2 TSP. ONION POWDER ,
1 TSP. GARLIC POWDER.
Mash with potato masher. Salt only if needed taste!
Spray 13x9 pan with cooking oil.
Layer your burritos as desired. Lay in a row along
pan. Top with salsa, sauces of your choice, and cheese
sauce. Sprinkle with shredded cheese. Bake until hot
and bubbly. Remove and plate with chopped lettuce,
tomato, sour cream, garnish with beef and onion and

Super Fast Enchilada Casserole | Oregon State Tailgate at Home

Ingredients:
- 2 packages frozen bean and cheese burritos
- 1 can mild red enchilada sauce
- 1 can mild green enchilada sauce
- Shredded cheese
- Sliced black olives
- Sour cream, for topping
- Salsa, for topping
Instructions:
1. Preheat oven to degrees noted on frozen burrito package.
2. Add frozen burritos to glass baking dish.
3. Cover completely with each can of the enchilada sauces.
4. Top with shredded cheese and sliced olives.
5. Cook as advised on burrito package (usually 45 minutes).
6. Serve with tortilla chips.
