How To make Basic Spaetzle Dough Recipe
2 Eggs
slightly beaten
1 1/2 C Flour :
sifted
1/2 C Milk
1 T Salt
1/4 T Baking powder.
(Adapted from Art Culinaire issue #39)
Bring a saucepan of salted water it a boil, reduce the heat, and maintain a simmer. In a bowl, stir all the ingredients together. Place a colander over the pan, pour about1/4 of the batter into the colander, and press through the holes with a plastic spatula into the hot water. When the spatzle starts to float to the surface, cover the pan and keep covered until the spatzle appears to swell and is fluffy. Remove the dumplings and repeat the procedure with the remaining batter.

Ingredients spaetzle:
- 250g flour (pastry flour, typ 405)
- 5 eggs (size M)
- 1 tbsp neutral oil (sunflower oil)
- 1 pinch of salt
Ingredients roasted breadcrumbs:
- 50g butter
- 100g breadcrumbs
- 1 pinch of salt
- Pepper
- 1 pinch of nutmeg
Instructions:
1. Beat eggs until foamy
2. Add flour little by little
3. Add oil and salt
4. Mix with a food processor, hand mixer or spoon until smooth
5. The dough should have a gummy consistency
6. Let the dough rest for at least half an hour
7. Beat the dough again until air bubbles form
8. Bring a large pot of water to boil and at salt
9. Put the dough into the spaetzle press and press it into the pot of boiling water
10. When the spaetzle float on top, let it boil for about 1-2 minutes. Remove the spaetzle with a slotted spoon
For the breadcrumbs:
1. Heat the butter in a pan and roast the breadcrumbs while stirring until golden brown
2. Pour the breadcrumbs over the spaetzle
Info:
Thin dough = thin spaetzle, thick dough = thick spaetzle.
If the dough is too thin, add flour.
If the dough is too thick, add a little water.

Easy Spätzle/Spaetzle recipe. In this video I show you how I make basic flour dumplings. These can be made with variety of vegetable purees, you can flavor them with spices, herbs etc.

Basic Spätzle/Spaetze Recipe
3cups(450grams) all purpose flour
3eggs
1 to 1 1/2cups(240ml to 360ml) water
1/2tsp salt
Stir all the ingredients together forming a medium stiff batter.
Bring water to boil, season water with salt.
Reduce heat to simmer.Using spatzle maker drop dumplings into water. Stir, increase heat to high. Once dumplings start to float on the top. Cook for one minute. Remove dumplings with the stainless steel strainer and drain them in the colander.
To prevent excessive sticking run the dumplings under hot water and then drain.
Drizzle little olive oil and gently stir.
