How To make Barbeque Sauce
1 c Catsup
1/2 c Onion; finely chopped
1/3 c Water
1/4 c Butter
1 tb Paprika
1 ts Brown Sugar; packed
1/2 ts Salt
1/4 ts Pepper
1/4 c Lemon juice
1 tb Worcestershire sauce
Heat all ingredients except lemon juice and worcestershire sauce. Bring to a boil. Add lemon juice and worcestershire sauce and heat until hot. Makes about 2 cups. [Variations I make: 1 Can Tomato sauce + 2 T. sugar. Slightly less butter, or none at all. The chicken seems to produce enough of it's own fat to make up for leaving any out. 1/2 T. packed brown sugar.] Pour over Skinned and cleaned Chicken. Cook in crockpot for about 6-8 hours on low. 4-6 hours on high. ______

Grammie's Memphis BBQ Sauce Recipe - Glen And Friends Cooking
Today we're making an old Southern cooking BBQ sauce from my relatives in Memphis Tennessee. This is a recipe that made it's way North in the 1960s and my Mom would make it every year. This year I finally did some digging to find the original.
Grammie's Memphis BBQ Sauce
¼ gallon vinegar (I QT )
7.5 cups ketchup
2.5 ounces Worcestershire Sauce
1.5 cups white sugar
½ Tablespoon dry mustard
2 teaspoon red pepper
3 cloves garlic - JUST CRUSHED
I large onion, cut up
I lemon cut up
½ Tablespoon rounded chili powder
Cook very slowly 4 hours. Cool. Strain.
Glen's Mom's Version:
1 - 7Lb tin ketchup
5 lemons
16 cups vinegar
⅛ cup dry mustard
1 Tablespoon cayene pepper
2 ½ Tablespoons chili powder
5 large lemons
7 cups sugar
7-8 garlic pods
1 small battle Worcestershire
Cook for about 4 hours.

BBQ sauce can be an excellent way to finish off food that is cooked on the smoker or simply served up as a sauce for other grilled foods as well. The sauce in general has a very long rich history and BBQ specifically sauce originally was more of a butter sauce that included cayenne and fresh herbs. The earliest recordings believe African American slaves and Creoles were the first to introduce the sauce to the new Western world and for good reason considering their history with smoked meats.

3 tbsp honey
2 tbsp vegetable oil
1 tbsp Worcestershire sauce
1/2 tsp mustard powder - or 1 tsp English mustard
1 ½ tsp smoked paprika
1/2 tsp black pepper - freshly ground
