1/2 c Brown sugar
1 c Sugar
1 c Shortening
1 lg Egg
1 ts Vanilla
1/2 tb Salt
2 c Flour
2 ts Cream of tartar
2 ts Baking soda
Preheat your oven to 350 degrees. Cream brown sugar, sugar, and shortening together until smooth. Mix into the creamed mixture the salt, egg, vanilla, flour, cream of tartar, and baking soda. Roll into a ball then roll in sugar. Place on a ungreased cookie sheet 1" apart and bake at 350 degrees for 10 to 12 minutes.

Mother Makes Sugar Cookies
Barbara Ann Hess Hershey Becker shows daughters how her mother taught her to make cookies. The aluminum dishpan is the actual one her mother used in the 1930's -- before electric mixers. Grandma Hess learned the art from her mother, Great Grandma Herr.
Grandma Hess made dozens of cookies -- both molasses and sugar cookies--for Tuesday and Friday markets at Central Market, Lancaster, Pennsylvania. Mother guesses that her mother baked an average of 50 dozen cookies in her coal-fired cook stove. She did this for 31 years, until her sudden death in 1953.

Ingredients:
150 g butter, softened (1/4 stick),
225 g flour (2 cups),
160 g granulated sugar (1 cup) (in the most vintage version - brown sugar in half and white),
200g (8 oz) of chocolate drops from: - 72% organic chocolate works beautifully.
2 tsp vanilla extract,
1 large egg,
½ tsp. baking powder,
¼ tsp. salt.
Preparation:
Mix softened butter and sugar until smooth.
Add 2 teaspoons vanilla extract and 1 egg and mix again.
Sift 225 g (2 cups) of flour, ½ teaspoon of baking powder and ¼ teaspoon of salt into the dough, mix.Add the chocolate.
Spread out on the paper, spreading small portions of dough evenly over the baking tray, leaving gaps between them, as the dough will spread out almost twice.
Bake the cookies for 8-10 minutes at 180 degrees C (350 F), until they are light brown around the edges and slightly soft in the center.
The classic cookie is done. While they're warm, they're soft, but once they cool, they're insanely crispy and melt in your mouth at the same time. And oooh very filling.

Ingredients:
250 g (8.8 ounces) softened butter
120 g (4.2 ounces) caster sugar
250 g (8.8 ounces) plain/ all-purpose flour
120 g (4.2 ounces) rice flour
If your butter is unsalted then add 1/4 of a tsp sea salt
Bake for around 15 minutes at 325 f, 160 c, or gas mark 3
