Farmhouse Omelet Skillet & Egg Salad | Southern Spring Cooking
Hey family! In today's video we're doing some spring Farmhouse Cookin'! We've got an abundance of eggs this spring so we're trying out different ways to use them. On Sunday morning I made a big Omelet Skillet! This is perfect for when you want all the flavors of an omelet, but don't have the time to make individual ones! The next day we make a Farmhouse Egg Salad for lunch. Even though we just added a few simple things to a normal egg salad recipe, it definitely made it fresher and springier!
Omelet Skillet
Ingredients:
8 eggs
1/4 cup milk
salt & pepper to taste
1 green bell pepper, diced
3 slices of breakfast ham, diced
2 tablespoons butter
1 cup shredded cheddar cheese
Directions:
Melt butter in a large skillet over medium heat. Add peppers and ham and cook for 3-4 minutes. In a large bowl whisk the eggs, milk, salt, and pepper. Pour egg mixture into skillet with ham and peppers. Scramble until eggs are almost done to your liking then add the cheese on top. Cover and turn the heat to low. Cook just long enough to melt the cheese.
Farmhouse Egg Salad
Ingredients:
8 boiled eggs, diced
salt and pepper to taste
1/2 cup mayo
1 tablespoon red pepper flakes
2 tablespoons sweet relish
1 large cucumber diced, or two small ones
1 or 2 celery ribs, diced
1 tablespoon pimentos
1/2 red onion, diced
Directions:
Mix all ingredients in a large bowl. Refrigerate until ready to serve.

Zucchini Jam?! Yep! Zucchini QUICK Jam! In today's video we're trying out something we've never made with zucchini and though I have my doubts, this stuff tastes amazing y'all! AND It only takes about 10 minutes to make it! It does need about an hour to set up though. ????????

Zucchini Quick Jam
NOTE: This is the original recipe that would make 24 ounces. I only made half in this video. ????????
Ingredients:
4 cups finely shredded zucchini, do not drain liquid out
2 cups granulated sugar
¼ cup lemon juice
3 ounce box Jell-O, any flavor
Instructions:
In a stock pot over medium heat, add grated zucchini, sugar, and lemon juice. Bring to a simmer, reduce heat to medium-low, and cook for 8 minutes. Add Jell-O powder and stir until fully incorporated. Remove from heat and allow to cool slightly. Mixture will look thin but will continue to thicken as it cools.
After mixture has cooled slightly, transfer into jars (leaving a 1-inch gap at the top to account for expansion when freezing) and allow to cool completely to room temperature with lids off. After jam has cooled, add lids and store in the refrigerator or freezer.

How I Make Sourdough Kefir Waffles
For my 10th upload I present to you ANOTHER kefir waffle recipe. Why? Well, because this one is different than the previous one, and so much better. My last waffle upload, Quick Basic Dairy Kefir Waffles, is a good recipe if you’re in a hurry and need something simple and fool proof. This Sourdough Kefir Waffle recipe takes some planning, as it will need to ferment for 8 to 12 hours. It also takes 2 specialty ingredients, kefir and sourdough starter. If you are already fermenting both kefir and sourdough in your kitchen, then you’ll be able to whip these waffles up with no problems.

Ingredients:
2 1/4 cups flour
Pinch real salt
1/4 cup warm water
1 Tablespoon real maple syrup
2 cups kefir
1/4 cup fed sourdough starter
Ferment 8-12 hours. Just before cooking add remaining ingredients:
3 eggs
1/4 cup melted butter
