Chinese Bacon & Onion Muffins (Asian Style Cooking Recipe)
Welcome to my Asian kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and learn new Chinese recipes.
Ingredients:
40g Bacon
1 Red Onion
1 Egg
40g Oil
50g Milk
90g Plain Flour
5g Baking Powder
Salt to Taste
Method:
1. Dice the onion and bacon finely.
2. Fry the bacon for 5 minutes.
3. Add the onion and fry for 3 minutes until soft.
4. Remove from heat to cool down.
5. Break the egg into a mixing bowl and beat well.
6. Add oil, milk and mix well.
7. Sieve flour, baking powder and soda into the egg and mix ingredients.
8. Add the fried bacon and onion, fold with a rubber or wooden spoon until evenly mixed.
9. Fill muffin cups to about 80% full.
10. Place in preheated oven at 180 degrees and cook for about 25 minutes.
11. Remove from oven and serve.

Savory Bacon Cheddar Muffins are the perfect on-the-go breakfast item. It’s a hearty, moist, and deliciously savory muffin that you’ll be happy to wake up to every day!

✅Ingredients
• 1 pound bacon
• 1/3 cup bacon drippings
• 1 large egg
• 3/4 cup milk
• 1 3/4 cups all-purpose flour
• 1/4 cup brown sugar
• 1 tablespoon baking powder
• 2 cups shredded cheddar cheese

1️⃣ 00:15 - Lay bacon out on a baking sheet in an even layer. Place the baking sheet into a cold oven. Set the temperature to 400 degrees and set a timer for 20 minutes. After 20 minutes check the bacon and remove when crispy. Transfer to a paper towel lined plate to drain. Reserve the drippings and measure out 1/3 cup. Once the bacon is cool, crumble it.
2️⃣ 00:38 - In a medium mixing bowl, combine the egg, milk, flour, sugar, baking powder, and bacon drippings. Stir until combined. There will still be some lumps. Stir in the bacon and cheese until evenly distributed.
3️⃣ 01:43 - Divide the batter among a lightly greased muffin tin. Bake at 400 degrees for about 15 minutes, until golden brown. Remove from the pan and cool or eat warm.

Cheese, Onion and Bacon Muffins
Easy recipe to make a tasty snack or lunch box filler. This recipe can be easily adapted e.g if you are vegetarian you could replace bacon for mushrooms or sweetcorn. If you want to save time by not cooking the bacon you could use chopped ham.
These are not your average dry muffin mixture, it is more like a batter that you bake.
I love dunking mine into some tomato sauce and a little mayonnaise :)
Ingredients
230g plain flour
600ml milk
2 medium eggs
4x cooked pieces of thick cut smoked bacon
1 Small red onion finely diced
100g grated Mozzarella cheese
100g grated Red Leicester cheese
1 tsp Dijon mustard
Salt and Pepper
If you have any left it will store in an airtight container in the fridge for up to 2/3 days.

You will Need
1 cup of All Purpose / Plain Flour
2 tablespoons of Sugar
1/2 a tablespoon of Baking Powder
1/4 a teaspoon of Salt
1 large Egg
1/2 a cup of Buttermilk or Yogurt
2 tablespoons of Melted Butter
2 Strips of Crispy Bacon
1/2 a cup of Cheddar Cheese
1 Spring / Green Onion
1 Hard Boiled Egg
Extra Cheese for the Top
Oven Temperature 375F / 190C for 25-30 minutes
Makes 6 Muffins

BACON AND EGG BREAKFAST MUFFINS
Ingredients
* 10 eggs
* 1/4 cup low fat milk
* salt and pepper to taste
* 1 red bell pepper, diced
* 1/3 cup thinly sliced green onion
* 6 strips bacon, cooked and crumbled
* 1 cup shredded cheddar cheese
Instructions
* Preheat your oven to 350 degrees Fahrenheit and grease a 12-cup muffin tin with baking spray.
* Whisk together the eggs and the milk and salt and pepper until well combined, and set aside.
* Divide the diced bell pepper among the 12 muffin cups and do the same for the green onion, bacon and cheese.
* Pour the egg mixture into each of the muffin cups until they're about 3/4 full.
* Bake for 10-13 minutes at 350 degrees Fahrenheit, or until the egg muffins are cooked through completely.
* Serve immediately, or store in an airtight container in the fridge for up to three days for an easy on-the-go breakfast idea. Reheat before serving.
