PREPARE AHEAD:
1 c Rice
1 Chicken bouillion cube
1/8 ts Saffron Threads
1 4x4 pc dried tomato sauce*
1 pk Freeze dried chicken
1 c Freeze dried peas
3 c Water
EQUIPMENT:
1 Pot
1 Cup
PACKING THE FOOD: Put into 3 small bags, then package with the trail directions: 1. Rice and (unwrapped) bouillion cube; 2. saffron; 3. dried sauce, chicken and peas. trAIL DIRECTIONS: 1. In a cookpot, add 2 cups water to rice, cover,
bring to a boil and simmer 15 minutes. Meanwhile, crumble the saffron threads into 1 T. water in a cup and let them soak. 2. About halfway through the rice cooking time, add 1 1/2 c more water, the saffron water, the dried sauce, chicken and peas. Cover, bring back to a boil and simmer until rice is cooked, about 7 more minutes. Add more water if necessary. Time: 20 to 25 minutes. * This is 1/4 of the Basic tomato sauce recipe.

Welcome back! Today I am making Arroz con Pollo (Rice with Chicken) with habichuelas guisadas (stewed beans).
Here are the ingredients:
For the rice:
3 cups long grain rice
3 1/2 cups water
1/4 cup canola oil
3 tbsp or 3 cubes sofrito
1packet Sazon Knorr
3 chicken breasts, cut in cubes
Adobo Goya
Oregano
Cumin
Salt to taste
Cilantro
Olives
For the beans:
2 cans small red beans (you can use any)
3 tbsp or 3 cubes of sofrito
2 cloves garlic
1 small potato, cut in small cubes

Arroz con Pollo
As you can see, not much is needed to prepare this dish. You can feed
4-5 people with this recipe and still have some left over.
The flavor of the chicken stock is what makes it so delicious.
The more you make this dish the better you get at it. The trick is the
broth, if your rice seems that its hard, its ok to add more broth about
1/2 cup then cover and let it stand for another 5 minutes.
Serve with a side of refried beans and tortillas.

You'll Need
8-10 Pieces of chicken
1 teaspoon of salt
1 teaspoon of paprika
1 garlic clove
2 cups of rice
3 cups of water
1/2 of a chopped onion
1/2 red bell pepper
1/4 cup finely chopped parsley
1/2 cup finely chopped cilantro
1 jar green olives
1/2 bag of peas and carrots
2 packages of Sazon Goya (for color) not needed
1 chicken bullion cube
Boil Chicken with celery salt, salt, paprika, and garlic clove until fully cooked. Let Chicken cool down by removing from the stock it has created and preserving it for later use. Once chicken has cooled all the way begin to shred meat away from the bone. Once all your chicken is shredded you should now heat your chicken stock on med/high heat.
Now that the Chicken stock is boiling add your rice and all other ingredients thereafter remembering to stir as you add to achieve maximum distribution on your ingredients through out the rice.
Let Rice boil.
Once the water is below the rice level lower your heat to medium and cover allowing the rice to sweat.
Once rice grains has expanded a bit give it a good stir taking all the dry rice on top and folding into bottom. This will get all your rice to cook evenly.
Cover your rice once again and put on low heat for about 5-10 minutes or until rice is cooked to your liking.

ARROZ CON POLLO
¾ cup Jasmine rice
2 cups chicken stock or water, (we use homemade stock)
1 tbs vegetable oil
2 garlic cloves
1 tsp whole cumin to crush
½ tsp coarse black pepper or peppercorns
1-2 tsp salt to taste
1 dash of oregano or to preference
¼ to ½ cup tomato sauce, preference
⅓ cup chopped or diced white onion
2 - 3 deboned chicken thighs cut into 1” pieces
