Apple Bread with Cinnamon Pecan Topping! | EASY Fall Recipe!
We're making apple bread today! This bread has a nice crunchy cinnamon pecan topping with delicious apple chunks throughout. If you're big into apple desserts, then this is the recipe for you! A great Fall favorite for those apple lovers!

Ingredients:
1 3/4 cup all purpose flour
2 1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1 tsp baking powder
2 eggs
3/4 cup sugar
1/3 cup veg oil
2 tbsp applesauce
2 cups finely chopped peeled apples
1 cup chopped pecans
1 tbsp sugar (for topping)
1/4 tsp cinnamon (for topping)
Directions:
To a bowl, mix together the eggs, sugar, veg oil, and applesauce. Add in the dry ingredients, careful not to over mix.
Finely chop 2 cups worth of apples, add those to the bowl. Coarsely chop 1 cup of pecans, add half to the bowl. Reserve the other half of pecans for the topping.
Mix in the apples and pecans. To a parchment lined 9x5 inch baking dish, or sprayed with nonstick cooking spray, add in the batter and spread it out as evenly as possible. It will be thick, do not thin out the batter. If you do, the apples may sink to the bottom during baking.
With the remaining pecans, add in the sugar and cinnamon and shake. Take the topping and sprinkle it over the top of the batter. Into the oven at 350 degrees for 55-60 minutes.
Remove from the baking dish as soon as it comes out of the oven to prevent the crunchy topping from getting soft from steam.
Let sit until cooled before slicing. Enjoy!

Bread Pudding
Serves 8
Ingredients:
butter
3 cups milk
6 eggs
¾ cup granulated or brown sugar
1½ teaspoons pure vanilla extract
1 teaspoon ground cinnamon
pinch ground nutmeg
pinch salt
12 cups cubed challah or brioche (or other egg-based bread), cut into 1-inch cubes (about 1-pound loaf)
½ cup any flavoring ingredient (chocolate, dried berries, apples, etc.…)
Directions:
1. Grease a 7-inch by 11-inch baking pan (ceramic or metal) with butter.
2. Combine the eggs, sugar, vanilla extract, cinnamon, nutmeg and salt in a bowl. Beat well. Add the milk and whisk.
3. Toss the bread cubes and flavoring ingredient together and place into the greased baking pan. Pour the egg custard over the top. Press down on the bread cubes to help the bread absorb the custard and let the pudding sit until most of the liquid has been absorbed. In the meantime, pre-heat the oven to 350ºF.
4. Transfer the bread pudding to the oven and bake in the 350ºF oven for one hour, or until a skewer inserted in the center of the pudding comes out clean, the top is nicely browned and springs back when you touch it.
5. Let the pudding cool to an edible temperature. Then serve with some maple syrup, whipped cream or a sauce.

1 c : Sugar
3 : Eggs
1 ts : Cinnamon
2 c : Half & Half or Milk

RECIPE:
APPLE PIE BREAD PUDDING
Servings: 6
INGREDIENTS
6 slices bread
3 eggs
½ cup milk
1 teaspoon vanilla extract
1 tablespoon cinnamon
3 granny smith apples, peeled and chopped
1 cup brown sugar
3 tablespoons cornstarch
Vanilla ice cream
Caramel sauce
PREPARATION
1. Preheat oven to 350°F/175°C.
2. Slice the bread into ½ inch cubes.
3. In a large bowl, combine the eggs, milk, vanilla, and cinnamon, stirring until smooth.
4. Add the bread and stir until the bread cubes have evenly absorbed the milk mixture.
5. Spread the bread evenly in a 9-inch round baking pan.
6. In a large bowl, combine the apples, brown sugar, and cornstarch, mixing until evenly combined.
7. Spread the apples evenly on top of the bread.
8. Bake for 40 minutes, until edges are brown.
9. Cool, slice, then serve with vanilla ice cream and caramel sauce!
