How To make Anasazi Bean Soup
1 c Anasazi beans, dry -- picked
-over and rinsed Vegetable stock or water 1 md Onion
chopped
2 lg Garlic cloves :
pressed or
-minced 1/4 ts Coriander
1/2 ts Cumin
1 Jalapeno or other pepper
-finelychopped Salt to taste Green onions -- minced, and/or -cilantro leaves for garnish
Cover the beans in water and soak overnight, allowing extra water for expansion. Drain, reserving soaking water. Measure soaking water and add stock or water to equal 6 cups. Pour into pot. Add remaining ingredients except salt and bring to a boil. Cover, reduce heat andcook at a low simmer for 1 1/2 to 2 hours, or until beans are tender. season with
salt to taste and serve hot, garnished with green onion and/or cilantro. Makes 4 servings. Per serving: 183 cal; 10 g prot; .9 g fat; 32 g carb; 0 chol; 422 mg sod; 6 g fiber; vegan.

2 tb : Low-sodium Tamari
5 1/4 oz : Extra-firm Silken Tofu
2 c : Onions; Chopped
1 : (7') Strip Kombu; Rinsed
1 1/2 c : Sliced Carrots
1/8 ts : Baking Powder
1/2 c : Cornmeal
3 c : Water
3 : Bay Leaves
2 c : Tomato Puree
1 1/2 c : Anasazi Beans
1/4 ts : Sea Salt
2 ts : Dried Savory
1 c : Celery; Chopped
1 tb : Balsamic Vinegar
Cowboy Pinto Beans Recipe
1 pound dried pinto beans
1 large yellow onion, sliced
1-2 jalapeños, diced
1 ham hock (8 to 10 ounces)
1 1⁄2 tablespoons dried cilantro
½ tablespoon Red River Ranch Original Seasoning
½ tablespoon Mesquite Seasoning
1. Pour the beans into a large soup pot. Pour enough water over the beans until they are covered by about 2 - 3 inches.
2. Add the onion, jalapeño, ham hock, and cilantro. Cook over high heat until the mixture reaches a rolling boil, stirring occasionally.
3. Cover and boil hard for 30 minutes, stirring occasionally. As soon as the beans are boiling, you may need to add more warm water to keep them slightly covered and throughout the cooking process.
4. Reduce the heat to medium. Stir in the spices. Cover and simmer for 11/2 to 2 hours, stirring occasionally, until the beans soften. Season again to taste, if necessary.
