Italian Chocolate Amaretti - Almond Cookies: (e49)
Buon Giorno Tutti! In this episode, Nonna Mia, la nonna di tutti (everyone's grandmother), creates the most delicious amaretti cookies - soft & chewy on the inside, crispy on the outside. You will love them! To start, mix the dry ingredients:
- 1 pound of almond flour, about 4 cups
- 1/2 pound of sugar, about 1 cup
- 1 teaspoon of baking powder
- 1 tablespoon of cocoa
Separately, in a mixing bowl, add 3 egg whites, a pinch of salt, and 2 teaspoons of almond extract. Whip until firm peaks form.
Then gently fold in the dry ingredients into the egg whites. Optionally, add in a shot of espresso. You want the dough to be soft, but the liquid should be fully absorbed.
Then using a scoop, or a tablespoon, start to form dough balls. Roll until smooth and uniform then roll them in sugar and secondly in icing sugar.
Place the cookies on a baking sheet with parchment paper. You can decorate the cookies with toasted almonds, chocolate chips, coffee beans or cherries, or feel free to leave them plain if you prefer. Lightly press down as you insert the amaretti decoration.
Bake at 325F for about 15 minutes. You want to check the cookie base and ensure it has slightly browned. YIELD: 36
Place the cookies on a rack to cool.
Then enjoy with a cup of coffee or espresso.

These traditional Italian cookies are love at first bite. I ate the ENTIRE BATCH while uploading this video. Amaretti are naturally gluten-free if that dietary aspect is important to you. Ingredients are listed below:
3 cups (288g) almond flour
2/3 cup (131g) granulated sugar
6 tablespoons (43g) confectioners' sugar
1/4 teaspoon salt
The whites of 2 large eggs
3/4 teaspoon almond extract
Bake 325°F 25-30 minutes.

????Ingredients: (Soft Amaretti Lemon cookies - 30 cookies):
2 cups blanched almond flour sifted (200 g)
1 cup granulated sugar (200 g)
2 egg whites large
1/3 cup confectioners’ sugar (55 g)
1/2 tsp almond extract
Pinch of salt
????Directions:
Pre-heat Oven on 320°F (160°C)
Step#1- Using a handheld mixer whisk egg whites, salt and almond extract until frothy. Slowly add the sugar and continue beating. Zest the lemon peel right in.
Step#2- Sift almond flour and fold in gently using a spatula turning from bottom to top.
Step#3- Using a 1 tablespoon ice cream scooper form cookies. Roll between your palms and into confectioner’s sugar.
Step#4- Place on a parchment paper lined cookie sheet. Pinch cookie using thumb, index and middle finger creating a pyramid shape.
Step#5- Bake at 320°F (160°C)- for 20 minutes.
Cool and enjoy!
They store well in an airtight container up to a week.

Amaretti Cookies (King Arthur Flour recipe)
Ingredients
• 3 cups (287g) almond flour (Nutstop.com almond flour--Excellent!)
• 2/3 cup (131g) granulated sugar
• 6 tablespoons (43g) confectioners' sugar, plus extra (1 cup or so) for coating
• 1/4 teaspoon salt
• 2 large egg whites
• 1/2 teaspoon almond extract
Instructions
In a large mixing bowl, combine the almond flour, sugars, and salt.
Add the egg whites and the almond extract, mixing until the dough becomes cohesive.
Form the dough into a disk, wrap it in plastic, and refrigerate for at least 1 hour.
Preheat the oven to 325°F. Lightly grease a baking sheet, or line it with parchment. (In the video I said to NOT grease the cookie sheet -- their instructions say you can lightly grease. Sorry for the confusion)
Scoop the dough into 1 balls; a teaspoon cookie scoop works well here.
Put the extra confectioners' sugar into a shallow bowl. Drop the dough balls into the sugar as you go. Once about five or six are in the bowl, shake and toss the bowl to coat the balls with sugar.
Place the dough balls onto the prepared baking sheet, spacing them about 1 1/2 apart. Gently press down on each ball to flatten just slightly.
Bake the cookies for 25 to 30 minutes, until they've cracked slightly and are a deep golden brown beneath the sugar, but are still slightly soft when pressed.
Remove the cookies from the oven, and allow them to cool for 5 minutes on the pan, then transfer them to a rack to cool completely.

Ingredients:
- 1 egg white (30 grams)
- 1/5 teaspoon salt
- 50 grams of sugar
- 110 grams of almond flour
- 30 grams of candied lemon peel
- 1/2 teaspoon lemon zest
Additionally:
- 2 tablespoons powdered sugar
- 2 tablespoons of sugar
Bake in preheated 350°F (180°C) oven / 16-18 minutes.

These Italian almond cookies (a.k.a. soft amaretti or amaretti morbidi) appear in my kitchen very often because they’re quick and easy to make, they taste delicious (especially if you love the almond flavor) and they require 3 basic ingredients (egg whites, almond flour, sugar), plus some aromatics and a pinch of salt.
In Italian, the word amaretti is derived from the word amaro, which means bitter. And so in order to get the true authentic taste of an amaretti, you must use ground bitter almonds or replace them with bitter almond extract. Luckily, most almond extracts have already bitter almond extract as their base because that’s what gives them their intense scent.

TIP: Use room temperature egg whites because they will whip up much faster.
