How To make (15) Chicken and Mushroom Stew (Thursday)
1 pound chicken breast R-T-C -- cut in 1-inch chunks
2 tablespoons
2 cups mushrooms (to 2 1/2 cups) reserved
2 cups homemade chicken broth (or canned)
1 cup Roasted Potatoes and Capers reserved
--from Sunday Roasted Potatoes 1/2 cup canned crushed tomatoes
1 tablespoon flour
fresh green beans, optional
Cook the chicken in 1 tablespoon oil in a 3-Quart saucepan until the meat loses its raw look. Add the reserved mushrooms, the chicken broth, reserved potatoes, and the tomatoes and stir to combine ingredients. Heat to a simmer and continue simmering until the chicken pieces are firm and opaque, about 5 minutes. Mix the flour with the remaining 1 tablespoon of oil and whisk into the stew. Simmer another minutes until the liquid in the pan thickens slightly.
Serve with fresh green beans and chunky bread.
Suzy's note: Freeze and label the rest of the can of crushed tomatoes and save for another use.

Chicken Mushroom Stew
Ingredients:
600-700g of free-range chicken chunks, marinate with light soy sauce and Shao Hsing wine
A few slices of ginger
1 clove of garlic, sliced
A few of dried mushroom, cut into half (soak in the water until fully soften)
Seasonings:
A small bowl of Shao Hsing cooking wine
1 small bowl of chicken stock (1 teaspoon of Ah Pa’s homemade chicken powder mix with hot water)
Pinch of salt
Pinch of sugar
Mushroom water
1 tablespoon of oyster sauce

Chicken & Mushroom Stew Chinese Style
Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.
Ingredients:
50g Dried Hazel Mushrooms
(if you cannot get Hazel mushrooms you can use Shiitake mushrooms from most Asian stores)
1 Small Whole Chicken
1cm Ginger
2 Spring Onions
Small Bunch (30g) Coriander
1 Tbsp Sugar
2 Tbsp Soy Sauce
3 Dried Red Chillies
1 Star Anise
1 Tsp Red Peppercorns
Salt to Taste
Method:
1. Soak hazel mushrooms in warm water for 4 - 6 hours.
2. Remove from bowl and rinse under cold running water.
3. Reserve the liquid you soaked the mushrooms in.
4. Finely chop the spring onions, ginger and coriander.
5. Roughly chop the chillies.
6. Cut chicken into portions.
7. Then cut into bite-size pieces.
8. Heat 2 Tbsp oil in the wok and add the sugar.
9. Stir the sugar over medium heat until it turns brown.
10. Add chicken to the wok, stir-fry until turned to a light golden colour.
11.Add ginger, chillies, star anise, red peppercorns, soy sauce. Stir-fry for 5 minutes
12.Add hazel mushrooms and stir-fry for 2 minutes.
13. Pour 500ml reserved liquid and bring to the boil.
14.Transfer to a stewing pan and cook on medium heat for 30 – 40 minutes
15.Add salt, spring onion, coriander and stir.
16. Transfer to a dish and serve.
