Authentic Longevity Noodles Soup | 长寿面 |????????
So last week I shared a recipe on how to make Tangyuan, a lucky food prepared for Chinese New Year. This week, I made another special dish called Longevity noodles (长寿面). This recipe is simple, delicious, authentic, and eaten for Chinese New Year or on birthdays, hence the name longevity, to live long. This is one serving.

Ingredients:
1 clove garlic 大葱
10 choy sum greens 菜心
1 scallion 香葱
1 tablespoon Olive oil 橄榄油
2 whole eggs 鸡蛋
1/3 teaspoon sesame oil 芝麻油
1 teaspoon Kosher salt 盐
1/16th teaspoon MSG 味精 (optional)
1 teaspoon homemade chili and Sichuan peppercorn flakes (optional)

Chinese Long Life Noodles (Instant Pot Chinese Cooking) Easy Chinese Cooking
Easy recipe for make Chinese Long Life Noodles using the Instant Pot. Long noodles symbolize long life. These noodles are served at Chinese New Year, for birthdays, wedding and special occasions. As for me, I enjoy eating these noodles anytime. You can also use other kinds of noodles for this recipe.

Recipe is below:
CHINESE LONGEVITY NOODLES
1 portion deep fried longevity noodle
2 chicken thighs
3 tablespoons peanut oil (or other cooking oil)
2 tablespoons slice ginger
3 to 4 cloves garlic
1 small carrot sliced
1 small onion sliced
2 cups celery sliced
3 cups water
2 cups bok choy (or other Chinese vegetables)
1 red pepper sliced
Set at saute setting at high heat for 10 minutes.
Add peanut oil. Then add ginger, garlic, carrots and
celery. Briefly stir fry. Add chicken thighs and sear
on both sides. Add water. Then close lid on Instant
Pot. Set the setting on high pressure and cooking
time for 5 minutes.
When cooking is finished, take out
chicken thighs and shred the chicken meat. Put the setting for saute
at high heat for 10 minutes. Put chicken back into the instant pot.
Also add bok choy, red peppers and noodles. Add soy sauce,
Chinese oyster sauce and sesame oil. Mix all the ingredients
with a spatula. Let simmer for 10 minutes or shorter time
if the noodles are heated through. Serve with hot steaming rice
if you like. Enjoy!

Shrimp Yi Mein [Easy Recipe] | 大蝦伊麵 | (Long Life, Happy and Wealth Noodles)
The natural sweetness and bouncy crisp texture of shrimp combined with this spongy and chewy noodle (yi mein) is a must try! Simple and easy to make at home, no need to wait for a Chinese banquet event. Shrimp Yi Mein is a must have during celebrations. Especially during Chinese New Year and Birthdays due to the deliciousness and the noodle’s meaningful symbolism.
Yi Mein (伊面) is a type of flat egg noodle made from wheat flour. That has a spongy and chewy characteristic.
This dish has a few combined meanings. A play on words, this shrimp yi mein means “long happy life” and “full of riches”. Yi Mean symbolizes long life, shrimp sounds like “ha” (哈), and 8 means riches. This dish is definitely a must have during celebrations and particularly for seniors!

▶ Recipe:
Ingredients:
8 large to medium shrimp
1 yi mein - 226 g
1 onion strips
1 tsp minced garlic
2 shallots strips
2 green onion stalks
Marinade:
¼ tsp salt
White pepper a dash
1 tsp cornstarch
Seasoning:
1 1/2 cups chicken stock
1/2 tsp sugar
1/4 tsp salt
Thickener:
Sesame oil a dash
White pepper a dash
1 tbsp cornstarch
2 tbsp water
Method:
1. Wash and pat dry shrimps. Straighten shrimp and cut half deep at the back. By doing such, it’s easy to remove intestines as well as to give the shrimp a puffier and fuller size after cooking. Add marinade ingredients and let marinade.
2. Cook noodles (yi mein) in hot water and use chopsticks to spread and loosen up the noodles. Once loose, strain noodles and set aside.
3. Use about 4 tbsp of oil and lightly sauté shrimp on both sides. Remove and set aside.
4. Lightly sauté minced garlic, onion and shallots strips for a little in the same oiled wok for flavour. Add shrimp and sauté lightly (1-2 minutes). Add cooking wine and give it a whirl. Add seasoning ingredients along with thickener and bring to a boil. Cover to cook for 2-3 minutes.
5. Sprinkle on green onions and it’s ready to serve.
Note:
1. Yi Mein, it’s better to under cook them if you’re not sure. Add a bit more time when cooking with shrimp.
2. Yi Mein (伊面) is a type of flat egg noodle made from wheat flour. That has a spongy and chewy characteristic.
3. Yi Mein does not take long to cook since they are precooked (Chinese instant noodles) and can get very soggy really quick. It only takes a few minutes to make and is usually served as a stir-fry in a light sauce.
Meaning of Yi Mein:
Yi Mein is also known as Long Life Noodles (長壽麵). Due to the lucky meaning, it’s a popular dish for celebrations such as birthdays, weddings, new years and especially popular with seniors. Never cut Yi Mein when serving, for it means cutting life short.

▶食譜:
材料:
去頭大中蝦8只
伊麺1個 - 226 g
洋蔥1個切????
蒜茸1茶匙
乾葱2粒切????
蔥2條切短度
醃料:
鹽1/4茶匙
胡椒粉少許
生粉1茶匙
調味料:
清鷄湯1 1/2杯
糖1/2茶匙
鹽1/4茶匙
茨料:
麻油少許
胡椒粉各少許
生粉1湯匙
水2湯匙
做法:
1. 中蝦洗浄抹乾, 在蝦背直????1刀1半深除去腸,加入醃料撈匀醃5分鐘。
2. 伊麵放入熱水略浸,用筷子撥散取出畄用。
3. 燒熱4湯匙放入蝦,煎香兩面取出畄用。
4. 鑊有餘油加入,乾蔥,蒜茸,洋蔥????爆香,將虾放入炒勻,賛酒2湯匙,倒入調味料煮滾加蓋,煮2至3分鐘至蝦熟埋茨。
5 將伊麺,蔥段放入兜勻,即可上棹供食。
