1 lb Shrimp, medium, cleaned,
Cooked 1 lb Feta cheese, *
1 c Scallions, sliced
1 tb Tomato sauce
1/2 c Olive oil
1/4 c Lemon juice, fresh
1 tb Parsley, chopped
1 tb Basil, fresh, chopped
1 tb Dill, fresh, chopped
1/2 ts Salt
1/4 ts Pepper
1 1/2 lb Fettuccine, or flat

Grilled Kalamari | Grilled squid
Calamari is very common in restaurants, but it is often prepared with a fryer so it is breaded and crispy. In Greece Kalamari is typically grilled. It still tastes incredible, and it makes the whole dish lighter and healthier. This is how we served it at our Greek restaurant and how I serve it at home for my family. I know at first it may seem intimidating, but I promise it is much easier than you think.
The best way to cook Calamari is not to fried it . The best way is to Grill it ????

Kalamari is a very popular seafood that is served all over Greece. It is either fried or grilled and it is always served with fresh lemon, never marinara. Grilling kalamari seems intimidating but is actually quite simple. Serve it with lots of fresh lemon wedges and a drizzle of ladolemono sauce and it’s a wonderful appetizer for your family and friends.
Serves 4 - 6
Ingredients
2 lbs fresh squid cleaned
1 tsp sea salt
½ tsp black pepper
1 tsp paprika
¼ cup extra virgin olive oil
Lemon wedges for serving
Ladolemono Sauce
¾ cup olive oil
¼ cup lemon juice
1 teaspoon sea salt
1 teaspoon black pepper
1 tablespoon dried oregano
Place your squid in a mixing bowl. Whisk the salt, pepper, paprika and olive oil together in a small bowl and pour over the squid, turning the squid over so it is completely coated.
Cover the bowl and allow the squid to marinate for at least 30 minutes or up to overnight.
Remove the squid from the refrigerator about 30 minutes before you want to cook it.
Bring a charcoal grill or gas grill to high heat.
Use tongs to place the kalamari on the grill and cook about 4-6 minutes per side, until completely cooked through. Remove the kalamari to a cutting board.
Cut the kalamari into rings about ½-inch wide to place on a serving platter.
Make the ladolemono sauce by whisking together the olive oil, lemon juice, salt, pepper, and oregano, drizzle it over the freshly grilled calamari and serve with fresh lemon wedges.

Creamy garlic parm shrimp
Serves 2
3-4 Table spoons neutral oil (Grape seed or sunflower oil)
1 lb Peeled deveined shrimp size 8-12
2 Tablespoons Salted butter
1 Tablespoon minced garlic
1/4 cup white wine (Chardonay)
1/2 cup Heavy cream
1/2 cup Grated parmesan cheese
Salt & Black Pepper to taste
Optional Garnish: Chopped parsley & Chili flakes
1. Add oil to a pan on medium heat.
2. Season the shrimp with salt and black pepper. Make sure to get both sides.
3. When the oil is hot, carefully add the shrimp. Cook each side for 2 minutes. When they’re done remove and reserve.
4. Discard any excess oil. Turn the heat down to medium low. Add the butter and let it melt.
5. Next add minced garlic. Fry until its fragrant or turns a light blonde color (about 1-2 minutes).
6. After that add the wine and let it reduce.
7. When the wine is almost dry combine the heavy cream, parmesan cheese and continue to reduce.
8. When the sauce is at your desired consisgtency season with salt to taste.
9. Finish with the chopped parsley and the cooked shrimp from earlier.
10. Serve hot with more chopped parsley and red pepper flakes.

RECIPE: GARLIC SHRIMP GREEK STYLE IN 30 min
1/2 lb. shelled, deveined shrimp (raw, medium)(225 gm) tail on
grated zest of 1 lemon
Grated zest of 1 orange
2 tbsp. olive oil (25 ml)
2 cloves garlic, thinly sliced
¼ cup sliced grape tomatoes (50ml)
Handful capers
Sea salt and cracked black pepper to taste
Splash dry white wine
¼ cup Shrimp stock, optional (50 ml)
fresh chopped dill for garnish
2 oz. Feta cheese, crumbled (60 ml)
In a medium bowl, combine the shrimp and grated lemon and orange zest with salt and pepper. Toss to combine.
Heat dry pan on high. When hot, add olive oil and shrimp. Toss for 1 minute on high heat. Reduce to medium, add the capers, garlic and tomatoes. Toss gently and reduce to medium heat.
Deglaze with white wine and add shrimp stock and reduce for 1 minute, to develop flavour and finish cooking shrimp. Sprinkle with feta and dill. Remove from heat immediately and toss.
Serve in a small platter

Today we want to show you how to make easy Baked Shrimp with Tomato and Feta. This is a very healthy and super easy Greek dish. It’s great for a week night meal or serve it to guest, everyone loves them. If you are a Shrimp lover you will definitely love this dish. We used to make this during the summer when there is an abundance of fresh tomatoes. But we want to show you how easy it is to make this all year round using canned tomatoes. The taste is very refreshing, simple but with just a little bit of seasoning added the complexity, feta cheese adds a salty and creaminess to it, the perfectly cooked shrimp gave it a nice texture. This is one of our favorite ways to eat shrimp.
