How To make Mexican Red Onion Soup (Vegan)
3 tb Olive oil
6 lg Red onions; thinly sliced
1 tb Sugar
1 ts Oregano, dried; crumbled
3/4 ts Ground cumin
3/4 ts Ground coriander
1/2 c Red wine vinegar
1/3 c Orange juice
1 1/2 tb All-purpose flour
7 c Stock
1/2 ts Salt
1/4 ts Pepper
1/4 ts Ground allspice
1/4 ts Ground cinnamon
: In a stockpot or 5 quart Dutch oven, heat the oil over low heat. Add the onions and cook, stirring frequently, for 30 minutes or until softened and lightly colored. Sprinkle the onions with the sugar, oregano, coriander, cumin, allspice, and cinnamon and cook 20 minutes more, stirring occasionally. : Stir in the vinegar and orange juice and cook 4 minutes longer. Sprinkle with the flour and cook, stirring constantly, for 1 minute. Stir in the stock and bring to a boil over moderate heat. Adjust the heat so that the mixture simmers gently, cover, and cook 20 minutes longer. Stir in the salt and pepper. Makes 8-1 1/2 cup servings. French Onion Soup: Recipe Demo -Vegetarian, via Michael Ruhlman
Jenna Edwards' recipe video demo from Twenty by Michael Ruhlman for French Onion Soup - and it's vegetarian!
Serves 4 to 6
Ingredients:
1 tablespoon butter
7-8 Spanish Onions (7-8 pounds), thinly sliced
Kosher salt
Freshly ground black pepper
6-12 slices of baguette or any country-style bread
1/3 cup sherry
red or white vinegar (optional)
red wine (optional)
.5 - .75 pound Gruyere or Emmenthaler cheese, grated
We start french onion soup with heavily caramelized onions. I cover this technique in this video:
Preheat your oven to 200 degrees. Place a few slices of baguette or country style bread in the oven and let them dry completely. You can leave the slices in the oven indefinitely, the heat's not high enough to burn the bread.
Add 6 cups of water to your caramelized onions and bring the soup to a simmer, then reduce the heat to low. Add a third of a cup of sherry or a suitable substitute if you don't have sherry. Here I've used a quarter cup of brandy. Salt and pepper as needed.
At this point you flavor the soup to your liking, so taste it. If it's too sweet, add a little vinegar. I added red wine vinegar. If you like a little more depth, add a splash of red wine. Add a little at a time and keep tasting until you decide you like the flavor. You can also add a little more water if you like a more delicate soup.
Preheat the broiler. Portion the soup into a ovenproof bowls and float the bread on top. Cover it with grated cheese like a Gruyere or emmenthaler and broil until the cheese is melted and nicely browned. Your soup is now ready to enjoy.

A classic french onion soup recipe absolutely must have caramelized onions. But Finding one that gives you the how and why, is few and far to come. We're talkin proper homemade french onion soup with all of it's caramelized onion goodness and lots of good melted cheese on top. Can't go wrong there.
