Sour Cream Noodle Bake

Ingredients
1 1/4 pounds ground chuck
One 15-ounce can tomato sauce
1/2 teaspoon salt
Freshly ground black pepper
8 ounces egg noodles
1/2 cup sour cream
1 1/4 cups small curd cottage cheese
Pinch red pepper flakes
1/2 cup sliced green onions (less to taste)
1 cup grated sharp Cheddar
Crusty French bread, for serving
Directions
Preheat the oven to 350 degrees F.
Brown the ground chuck in a large skillet. Drain the fat, and then add the tomato sauce, 1/2 teaspoon salt and plenty of freshly ground black pepper. Stir, and then simmer while you prepare the other ingredients.
Cook the egg noodles until al dente. Drain and set aside.
In a medium bowl, combine the sour cream and cottage cheese. Add plenty of freshly ground black pepper and a pinch of red pepper flakes. Add to the noodles and stir. Add the green onions and stir.
To assemble, add half of the noodles to a baking dish. Top with half the meat mixture, and then sprinkle on half the grated Cheddar. Repeat with noodles, meat and then a final layer of cheese. Bake until all the cheese is melted, about 20 minutes.
Serve with crusty French bread.
To freeze: Assemble the Sour Cream Noodle Bake in a disposable aluminum oven-proof pan and seal the top of the container with the lid or heavy foil. Seal the edges to prevent freezer burn and place in the freezer.
To cook from frozen: Place directly in a 375-degree F oven and bake, covered, for 45 minutes. Remove the lid and bake until lightly brown and bubbly, about 20 minutes more.

Recipe
Beef & Egg Noodle Casserole
Prep time: 35 minutes Bake time: 25 minutes
5 cups uncooked egg noodles
1 pound ground beef
1 can (8oz) tomato sauce
1 teaspoon salt
1/2 teaspoon pepper
3 teaspoons butter
1 cup (8oz) cottage cheese
1 cup (8oz) sour cream
3 green onions (chopped)
1-1.5 cups mozzarella cheese
Boil noodles. While the noodles boil, brown ground beef until no longer pink. Drain. Add tomato sauce, salt, and pepper. Stir and bring to a boil. Reduce heat and simmer for 5 minutes.
Drain noodles. Put in a big bowl and gently stir in butter to coat the noodles. Fold in cottage cheese, sour cream, and chopped green onions.
Lightly grease a 13 x 9-inch pan or medium-sized casserole dish: layer noodles, meat sauce, and cheese. Typically there is enough to complete three layers. Sprinkle with cheese and dot with additional butter patties (optional).
Bake uncovered in the oven at 350 degrees for 25 minutes. Enjoy!!!

You can prepare this easy to make casserole. You will need 1 pound of hamburger, noodles, sour cream, cottage cheese, and tomato sauce for this casserole. Best of all this recipe reheats very well.

Sour Cream Noodle Bake! Old family recipe! Literally the recipe I used I wrote when I was 10ish - so OLD is certainly correct. It's delicious and so very simple. I believe it's these old recipes that brought about the idea for hamburger helper - that's all we did, help hamburger make a delicious meal. Little slip in this when I forgot to mix the cheeses with the noodles but we recovered. There are no mistakes when you cook only possibilities. Ha!
