How To make Grecian Style Shrimp Scampi
1 c Butter
1 c Olive Oil
1 t Salt
1 t Pepper
1 tb Rosemary
1 t Oregeno
2 tb Paprika
4 Bay Leaves
4 Cloves Garlic, finely
Chopped 3 lb Jumbo Shrimp, peeled &
Deveined 1 lb Feta Cheese, crumbled
1 c Unseasoned Bread Crumbs
3 oz Sherry
Preheat oven to 375oF. To make scampi sauce: In sauce over low flame melt butter, adding oil, salt, pepper, rosemary, oregeno, paprika, bay leaves, garlic and sherry. Place cleaned shrimp in large baking dish. Cover shrimp with feta cheese and top with breadcrumbs. Pour scampi sauce over shrimp and bake until shrimp are tender, approximately 25 minutes. Serve over rice or angel hair pasta.

I love this shrimp scampi pasta recipe! Buttery, zesty and so satisfying… If you want to add more lemon wine butter and garlic to this recipe I certainly won’t stop you!
I love using spaghetti but if you want to sub in your favorite pasta to make linguini shrimp scampi for example then go ahead! If you’d like to try making your own pasta from scratch
ABOUT THE SHRIMP
I bought some super-fresh jumbo shrimp to make this dish and they made all the difference! Don’t use frozen precooked shrimp to make this recipe, the taste and texture will be subpar.
Cleaning, or deveining shrimp can seem a bit intimidating so I wanted to go over the process.
Start by removing the shell. You can peel it off from the bottom where the little swimmeretes are.
Once the shell is removed use a small knife to make a roughly 1/4″ deep cut down the top of the shrimp.
Now you should be able to see a small vein which you can pull out using your fingers.
That’s it! If you’re having difficulty you can cut a bit deeper and use a knife to help remove the “vein” which is actually the shrimp’s digestive tract.

RECIPE: GARLIC SHRIMP GREEK STYLE IN 30 min
1/2 lb. shelled, deveined shrimp (raw, medium)(225 gm) tail on
grated zest of 1 lemon
Grated zest of 1 orange
2 tbsp. olive oil (25 ml)
2 cloves garlic, thinly sliced
¼ cup sliced grape tomatoes (50ml)
Handful capers
Sea salt and cracked black pepper to taste
Splash dry white wine
¼ cup Shrimp stock, optional (50 ml)
fresh chopped dill for garnish
2 oz. Feta cheese, crumbled (60 ml)
In a medium bowl, combine the shrimp and grated lemon and orange zest with salt and pepper. Toss to combine.
Heat dry pan on high. When hot, add olive oil and shrimp. Toss for 1 minute on high heat. Reduce to medium, add the capers, garlic and tomatoes. Toss gently and reduce to medium heat.
Deglaze with white wine and add shrimp stock and reduce for 1 minute, to develop flavour and finish cooking shrimp. Sprinkle with feta and dill. Remove from heat immediately and toss.
Serve in a small platter

Ingredients:
10z (280g) shrimp, peeled and divined
8oz (230g) linguine or spaghetti
Olive oil 2 tablespoons
2-3 garlic cloves, minced
1/2 teaspoon red pepper flakes
3 tablespoons (45g) butter
1/4 cup (60ml) dry white wine
1/4 cup (60ml) fresh lemon juice
Zest of one lemon
1/4 cup (25) grated parmesan cheese
Salt
Pepper
2 tablespoons chopped parsley
Ingredients:
1. Bring large pot with water to a boil. Add salt. Add pasta and cook to al dente according to package directions. Drain when ready.
2. Meanwhile: in a large skillet heat olive oil, add shrimp, season with salt and pepper. Cook until pink and slightly curled. About 1-2 minutes on each side.
3. Add garlic, pepper flakes, and cook for 1 minute. Add butter to the pan, let melt stirring occasionally. Add white wine, lemon juice, lemon zest, salt and pepper. Cook until reduced by half.
4. Add drained pasta, chopped parsley and parmesan cheese. Toss to coat.
5. Serve immediately.

Ingredients:
1 lb. Rotini Pasta
2-3 tbsp. Olive Oil
1 lb. Shrimp
2 cloves Minced Garlic
20 Scallions
1 tsp. Oregano
1/2 tsp. Salt
1/2 tsp. Black Pepper
1 lb. Diced Tomatoes
8 oz. Feta Cheese
Instructions:
Cook pasta and set aside.
Sauté garlic, onions, seasonings, and shrimp until the shrimp is done.
Add tomatoes and heat through for 3 minutes.
Add cooked pasta and feta cheese and toss into sauce.
