How To make Chili Blanco Especial
Jim Vorheis 1 lb Dry White Northern Beans
5 1/4 c Chicken broth
2 Cloves garlic, minced
1 lg White onion, chopped
1 tb Ground white pepper
1 t Salt
1 tb Dried oregano
1 tb Ground cumin
1/2 ts Ground cloves
7 oz Can diced green chilies
5 c Diced cooked chicken breast
1 3/4 c Chicken broth
1 tb Diced jalapeno pepper
-(optional) 8 Flour tortillas
Condiments: Shredded Monterey Jack Sliced black olives Chunky salsa Sour cream Diced avocado
Soak beans in water to cover for 24 hours; drain. In crock pot or large kettle, combine beans, 5 1/4 cups chicken broth, garlic, onion, white pepper, salt, oregano, cumin and cloves. Simmer covered for at least 5 hours until beans are tender, stirring occasionally.
Stir in green chilies, diced chicken, and 1 3/4 cups chicken broth. For hotter taste, add jalapeno. Cover and simmer for 1 hour. To serve, line each bowl with 1 flour tortilla. Servings - 1
Ingredients:
4 pieces garlic
4 sticks green onion
4 dried chili peppers
3 tbsp chili oil (
2 cups overnight rice (leftover white rice)
1 1/2 tbsp soy sauce
Directions:
1. Finely chop the garlic. Chop the green onion
2. Remove the seeds from the chili peppers and roughly chop them
3. Heat up a non stick pan to medium low heat. Add in the chili oil
4. Add in and sauté the onions, garlic, and peppers for 1-2min
5. Turn up the heat to medium. Add in the rice and the soy sauce
6. Sauté for 4-5min

Cut up some onions and peppers. Cook them in a big pot until soft. Dump in canned crushed or puréed tomatoes and undrained canned beans — roughly equal quantities is a good starting point, though I like extra tomato. Dump in a lot of spices until you like how it tastes — cumin + smoked paprika + oregano + garlic powder is a good basic blend. Simmer for about a half hour. If you want to be fancy, melt in a little dark chocolate. Eat and go do something else with your life.
