How To make Chili Blanco
1 lb Boneless, skinless chicken
-breasts, diced 1 tb Vegetable oil
1 1/2 c Chopped onions
2 ts Chopped garlic
1 cn (7-oz.) ORTEGA diced green
-chiles 1 tb (to 2) ORTEGA diced
-jalapenos 2 ts Ground cumin
1/2 ts Dried oregano leaves
2 cn (15-oz.) White beans, rinsed
-and drained 1/2 c Chicken broth
1 1/2 c Shredded Monterey Jack
-cheese (6 oz.) 1/2 c Sour cream
Additional sour cream, -sliced green onions, -chopped cilantro and -chopped tomatoes (optional) In a 4-quart pot, over medium heat, saute chicken in 2 teaspoons oil for 5 to 6 minutes or until chicken is done. Remove chicken from pot. In same pot, over medium-high heat, saute onions and garlic in remaining oil for 3 minutes. Add chiles, jalapenos, cumin and oregano; cook for 3 minutes more. Add white beans, chicken broth and reserved chicken. Heat to a boil; reduce heat. Simmer for 10 minutes. Add cheese and sour cream; cook and stir until cheese melts. Serve topped with additional sour cream, green onions, cilantro and tomatoes, if desired.

~2 lb leftovers or sub for chicken, boneless breasts or thighs
2 tbsp Extra Virgin Olive Oil
1 large yellow onion, diced
3 Anaheim chiles, seeded, diced
1 jalapeno, seeded, diced
1 tbsp ground cumin
1 tsp oregano
4 cloves garlic, minced
3 tbsp unsalted butter
1/4 cup flour
1 quart unsalted chicken stock
1 cup 50/50 or heavy cream
8 oz cream cheese, cubed
1 bunch cilantro, minced
4 oz (1 cup) pepper jack cheese, grated

Bonafide White Chicken Chili Recipe
WHAT MALCOM USED IN THIS RECIPE:
- Malcom's Bonafide Chili Seasoning
- Killer Hogs Hot Sauce
- Thermoworks DOT
To Smoke Chicken: Season whole chicken with 1 Tablespoon Bonafide Chili Seasoning and smoke until 165 degrees in breast. Shred chicken and reserve for later.
Ingredients
- 2 tablespoons butter
- 1 onion diced
- 1 poblano peppers chopped
- 1 jalapeño chopped
- 5-6 cloves garlic minced
- 2 4oz cans diced green chilies
- 32oz chicken broth
- 2 Tablespoons Malcom’s Bonafide Chili Seasoning
- 8oz cream cheese softened
- 2 cups Monterrey Jack Cheese shredded
- 1 can Cream of Chicken Soup
- 2 cans Bush’s White Chili Beans
- 1 cup Heavy Cream
- 1 teaspoon salt (optional)
- 1 teaspoon black pepper (optional)
- 2lb cooked chicken
Directions:
1. Sauté onion and peppers in butter over medium heat for 2-3 minutes. Add garlic and continue to sauté for 1-2 minutes.
2. Add broth, canned green chilies, and Malcom’s Bonafide Chili Seasoning. Bring to a simmer for 15-20 minutes.
3. Stir in cream of chicken soup, cream cheese, and jack cheese. Continue to simmer for stirring occasionally until cheese melts.
4. Once cheese has melted, add heavy cream and chili beans. Taste for seasoning and return to simmer. Add chicken and allow to heat through (10-15 minutes) before serving.
5. Garnish options: shredded cheddar, sour cream, avocado slices, cilantro, sliced jalapeño and hot sauce
