How To make Chick Pea Salad with Garlic Cumin Vinaigrette
Ingredients

chickpeas, dried, soaked
1 1/2
cup
onion, red, finely diced

olive oil

garlic, cloves, crushed

jalapeno chili, red, minced

tablespoon
herbs, chopped

tablespoon
cilantro leaves

tablespoon
lemon juice

tablespoon
cumin, seeds, coarsely crushed

salt, to taste
1
pepper, freshly ground, to taste
Directions:
Drain soaked chickpeas and cook, covered, in water to cover until tender, about 2 hours or a little longer. Plunge them into cold water, then rub them between fingers to remove the skins.
For the vinaigrette, whisk olive oil with garlic, jalapeno, herbs, vinegar or lemon juice, salt, and pepper. Pour over the salad and mix thoroughly. Taste and adjust seasoning with salt and vinegar, let stand 30 minutes or longer.
Add cilantro leaves as garnish. Serve at room temperature.

2 cups water or vegetable broth
⅓ teaspoon salt
For the Salad
1 can (15 oz) chickpeas or 1½ cups cooked chickpeas
1½ cup yellow bell pepper
1½ cup cucumber
1½ cup cherry tomatoes
½ cup olives
¼ red onion
⅓ cup parsley
1 ripe avocado optional
For the Dressing
4 tablespoons olive oil extra virgin
2 tablespoons lemon juice or apple cider vinegar
1 tablespoon mustard
1 tablespoon maple syrup
½ teaspoon salt
4 twists black pepper
1 teaspoon ground cumin optional

Ingredients:
- One can chickpeas (rinsed)
- Large handful or spinach (about 100g should do it)
- 100g soft cheese (like feta)
- 1/2 lemon or 1 tbsp white or malt vinegar
- 1 tbsp honey
- Pinch of cumin
- Pinch of salt
- Couple of chili flakes (or dried cayenne pepper will do the trick nicely)
- Small handful of raisins (or malt loaf, chopped, if you have it)
Directions:
- Chop the cheese and add with the spinach and chickpeas to a - -large bowl
- Mix the honey, oil, lemon juice and raisins in a small bowl
- Add the cumin, salt and pepper to the dressing bowl and mix well
- Drizzle devilishly delicious dressing over the salad

Ingredients:
• 5 tbsp olive oil
• 1 tbsp red wine vinegar
• 1 tbsp orange juice
• 1 minced garlic clove
• 4 tsp ground cumin
• 1 tsp sugar
Method:
• Place all ingredients into a glass (Mason) jar, and shake thoroughly to mix. Store in the fridge but serve at room temp - otherwise the oil will clump, and no- one likes clumpy oil.
