INGREDIENTS
1 lb ground turkey or beef
2 Tbsp taco seasoning
2 ears of fresh corn
Romaine lettuce
cucumber
tomatoes
carrots
red onion
black olives
AVOCADO DRESSING
2 small avocadoes
10 to 12 sliced pickled jalapenos
3 Tbsp pickling liquid
1/3 cup water
salt to taste
Taco Salad Recipe
Classic Taco Salad
Growing up on a farm, a classic taco salad was a staple! During the summer, when we'd all get in late from outdoor chores, the easiest thing to throw together was this recipe. And what's great is that each eater can customize it for their personal preference. Consider this a weeknight meal solution!

INGREDIENTS
For the meat:
- 1 lb ground beef (I use 92% lean)
- 1/2 medium onion, diced
- 1 tbsp chili powder
- 1/2 tsp cumin
- 1 tsp dried Mexican oregano
- 1/2 tsp salt
- 1 15-oz can fire-roasted diced tomatoes
- 1 15-oz can red kidney beans, rinsed and drained
For the dressing:
- 3 tbsp ketchup
- 1 1/2 tsp Worcestershire sauce
- 2 tsp honey
- 2 tbsp red wine vinegar
- 1 tsp chipotle powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/3 cup neutral oil
For the salad:
- 2 heads romaine lettuce chopped
- tortilla chips
- avocado or guacamole
- shredded cheese
- salsa
- hot pepper mustard
INSTRUCTIONS
For the meat:
- In a large skillet or saucepan, brown the beef and onion over medium heat, using a spoon or spatula to break it up into small pieces.
- Once browned, about 4-6 minutes, add the chili seasoning, oregano, cumin, and salt. Stir for 30 seconds and add the tomatoes and kidney beans. Turn the heat to a low simmer and cook for 10-15 minutes, or until most of the liquid has reduced.
- Once cooked, remove from heat and set aside.
For the dressing:
- In a dressing shaker or small jar, combine the ketchup, vinegar, honey, Worcestershire sauce, chipotle powder, onion powder, garlic powder, salt, and oil. Shake until combined, taste for seasoning, and set aside.
For the salad:
- To serve the salad, start with chopped lettuce. Top with some of the meat mixture, chips, dressing, and any garnishes.

Taco Salad in a Mason Jar Recipe
This Taco salad in a Mason jar is about to step up your lunch game. It's a healthy taco salad with all the great classic taco salad fixings with a few healthy modifications. Recipe Below.
Serves 4:
$6.50 Recipe / $1.63 Serving
Ingredients:
1 lb / 500 Grams of Ground Beef
2 Tablespoon of Chilli Powder
1 Teaspoon of Cumin
1/2 Cup of Greek Yoghurt
1/2 Cup of Salsa
1 Cup of Tomato (Chopped)
1 Cup of Corn Kernels
1 19 oz Can of Beans
1 Cup of Shredded Shredded Cheese
1/2 Cup of Cilantro (Chopped)
Juice of half a lime
1 Cup of Lettuce
1 Avocado
Corn Chips
Recipe:
1. Fry up ground beef in a pan on medium high heat. Add cumin and Chili powder. Fry till cooked. Drain fat from pan with a spoon. Remove from heat and chill in an open container.
2. Add salsa and yoghurt to the bottom of each jar. Then follow with the ingredients that can handle the dressing juices. Start with kidney beans, then corn, tomatoes, chilled ground beef, cheese, avocado, lettuce, and cilantro.
3. When ready to serve, add chips to a large plate or bowl, and dump/ spoon out your chilled taco salad, mix, and enjoy.

- 2tsp chili powder
- 2tsp cumin
- 1/2tsp onion powder
- 1/2tsp garlic powder
- 1/4tsp cayenne (more if you like heat)
- 1tsp course sea salt
Cilantro Lime Dressing
- 1 Tbsp olive oil
- 1/2 cup sour cream
- Juice of (1) lime
- 1/2 cilantro
- 2 cloves of garlic
- Pepper, to taste
- Cumin, to taste
- Smoked paprika, to taste
- Pinch of cayenne if you would like
