★★★ Jeera Chicken ★★★
➤ Serves: 4
➤ Ingredients:
• 1 kg Chicken
• 2 tsp + 1 tsp Salt (or to taste)
• ½ tsp Turmeric (Haldi) Powder
• 1 tsp Cumin (Jeera) Powder
• ¼ tsp Black Pepper (Kali Mirch) Powder (or to taste)
• 1 tsp Red Chilli Powder (or to taste)
• 2 tsp Garlic Paste
• 2 tsp Ginger Paste
• 2 tsp + 1 tsp Cumin seeds (Jeera)
• 2 TBSP Oil
• 7-8 Curry Leaves (Kadi Patta)
• 2-3 Green chillies – slit vertically and chopped into large pieces (or to taste)
• 1½ cup Onions – sliced
• 1 tsp Coriander (Dhaniya) Powder
• ½ tsp Garam Masala
• 1 tsp Lemon Juice
• ¼ cup Cilantro (Coriander) - chopped
1 cup = 250ml, 1 TBSP = 15ml, 1 tsp = 5ml
➤ Method:
• Take chicken in a bowl and add 2 tsp salt, turmeric powder, cumin powder, black pepper powder, red chilli powder, garlic paste and ginger paste. Mix well and let chicken marinate for at least half an hour.
• After half an hour roast 2 tsp cumin seeds on low heat until golden and aromatic.
• Crush them slightly in mortar and pestle and keep aside.
• Heat a heavy bottom or non-stick pan on medium setting.
• Add oil, 1 tsp cumin seeds, curry leaves, green chillies, onions, salt and coriander powder.
• Mix well and cook till onions turn shiny and soft.
• Add marinated chicken and mix well.
• Cook till moisture has evaporated and chicken is soft and tender. When you cut a piece of chicken, it should be soft and white from inside and NOT pink.
• Then add garam masala, lemon juice, roasted and slightly crushed cumin seeds and cilantro.
• Mix well, switch off the heat and serve.

Spicy Garlic Cumin Chicken
Follow for more recipes like this Spicy Garlic Cumin Chicken! This recipe is fairly simply and yields a flavorful and bold dish. Feel free to bake/roast the chicken thighs instead (400F for 40-45 min). You can always adjust the spice by adding more or less cayenne pepper and adding optional hot sauce. Cheers!
Ingredients:
-2lbs chicken thighs, bone in and skin on
-1/4 cup neutral or olive oil for frying
Marinade:
-1/4 cup olive oil
-juice of 1 lime *optional*
-4-5 garlic cloves
-2 tsp cumin
-2 tsp garlic powder
-2 tsp onion powder
-2 tsp salt
-2 tsp pepper
-1 tsp cayenne pepper
-1 tsp smoked paprika *optional*
Directions:
-in a food processor or blender, add marinade ingredients; blend until fully incorporated
-lightly score skin-side of the chicken with a knife to help marinade penetrate
-add chicken and marinade in a large bowl; mix well and allow to sit in fridge for 30 minutes up to overnight (4-6 hours ideal)
-set a large skillet or pan on medium heat
-add 1/4 cup of oil to pan
-lay chicken thighs away from you, skin-side down (do not overcrowd pan)
-sear for 4-5 minutes until golden brown; flip and sear for 3-4 minutes
-cook until internal temp 165F or juices run clear
-remove from heat and place onto plate lined with paper towels
-can toss with optional hot sauce as well
-serve with favorite sides and enjoy!

Jeera Chicken | Cumin Chicken | Dry Masala Chicken
Ingredients
-Cumin/Jeera- 2 tbsp
-Oil- 5 tbsp
-peppercorns - 6
-Cardamom- 3
-Green Chilli- 2
-Garlic- 1 tbsp chopped
-Ginger - 1 tbsp chopped
-Coriander powder- 1 tsp
-Cumin/jeera powder- 1 tsp
-Chilli powder- 1/2 tsp
-Salt as per taste
-Chicken- 700 gms
-Garam masala- 1/2 tsp
-Fresh Coriander- 1 tbsp
Method
-Heat a pan and roast 1 tbsp of jeera on low heat till slightly brown and keep aside.
-Heat a pan, add oil, once hot, add 1 tbsp of jeera, once it splutters, add peppercorns, cardamom and sauté for 2 mins.
-Add chopped green chillies, garlic and ginger and fry for 2-3 mins
-Add Coriander powder, jeera powder, chilli powder and salt and fry for 2 mins.
-Add chicken pieces and fry well on med- high heat for 5-8 mins and keep stirring.
-Cover and cook for 15 mins
-Add Garam masala and the roasted cumin/jeera seeds and cook for another 5 mins on med flame, fry well till masalas coat the chicken.
-Garnish with fresh coriander and serve as an appetiser or with main course with a serving of raita.

Chinese Cumin Chicken Recipe (Chinese Spicy Cooking Recipe)
Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.
Ingredients:
550g Chicken Breasts
2 Tomatoes
3 Green Chilli Peppers
2 Spring Onions
4 Cloves Garlic
10g Ginger
1 Tbsp Cumin Powder
1 Tsp Chilli Powder
1 Tbsp Cumin Seeds
1 Tbsp Sesame Seeds
1 Tbsp Cooking Wine
1 Tbsp Light Soy Sauce
1 Tsp Sugar
Salt to Taste
Method:
1. Chop the spring onion, garlic and ginger
2. Slice the chilli peppers and cut the tomatoes into wedges
3. Slice chicken breasts lengthways into 2 thin layers and then cut into thin strips
4. Place chicken in a mixing bowl
5. Add soy sauce, sugar, salt, cooking wine, chilli and cumin powder. Mix well and leave to marinate for 30 minutes
6. Heat 1 litre of oil in the wok till smoking hot
7. Place marinated chicken in hot oil, stir-fry for 3 - 5 minutes, remove from oil and drain
8. Heat 1 Tbsp oil in the wok, add spring onion, garlic, ginger and cumin seeds. Fry for a minute
9. Add the chilli peppers, tomatoes and chicken, stir-fry for a minute
10. Add sesame seeds and stir for few seconds
11. Transfer to a dish and serve
