1 cn Beans (I've used pinto,
Black, and kidney) 1 cn Hominy
x Spices - I use garlic, Onion, parsley, basil, Thyme Cook quinoa w/ 2 cups water. Add tomatoes, beans, hominy and spices and keep on low heat until all is hot. Pozole has always been a special occasion meal in Mexico. People will serve it for birthdays, any an all sorts of parties, and it’s very popular during the holiday season and quite common to see pozole on offer at the Christmas dinner table.

This veganized pozole rojo makes a great substitute for the meat versions. This delicious vegan recipe is made using mushrooms.
Of course, because there’s no meat in this, it’s not going to taste exactly like chicken or pork pozole. But in the 2 years that I’ve been making it this way, I’m fully satisfied every time the pozole craving strikes.

How to Cook Dried Corn Hominy
The reason why I made my version of hominy is because most can hominy contains sodium bisulfite. This compound is added to food to promote color retention. A dangerous compound that may cause genetic mutations.
Serve: 3 | Total Time: 1 Hour | Vegan
INGREDIENT:
1 lb dried corn hominy (yellow or white / whole or pieces)
Water
DIRECTIONS:
STEP 1
Rinse well, then soak the dried hominy corn overnight.
STEP 2
[Medium Heat] Place hominy in a pot soaked in 4 inches of water. Cook for 1 hour or until the corn is soft to eat. Add additional water if needed.
STEP 3
Drain hominy. Can be served plain as a side dish or used as a component for other dishes.

How to make hominy from scratch
Take grandma’s pozole recipe to bold heights with this homemade hominy! ????????????????????✨
Ingredients:
1 kilo dried cacahuazintle kernels
2 tablespoons pickling lime
2 cups water
Preparation:
Remove any debris (straws, stones, or black kernels) from the dried cacahuazintle maize kernels. Rinse and set aside.
In a large bowl, combine maize kernels, water, and pickling lime. Stir until pickling lime is dissolved and set aside. You may notice tiny air bubbles rising to the surface.
Transfer to a large pot and cook for two hours or until maize kernels are soft and silky. Let cool.
Rinse and hull maize kernels.

Mama is a master chef. Today we are cooking up Hominy Corn porridge and Vegan Carrot balls. YUUUUMMMMOH!
Mama Myrna's Hominy Corn Recipe
1 1/2 Cups of Hominy Corn (Soaked overnight)
6 Cups of Water
2 Cinnamon leaves
1/2 Tsp Salt
2 Tsp Vanilla
1/2 Tsp Almond Extract
1 Tsp Nutmeg
2 Cups of Coconut Milk
Condense Milk to sweeten OR Honey if you are avoiding dairy
1/2 Cup of Evaporated Milk (Optional)
Vegan Carrot Balls
2 Large Carrots
1/4 Cup Oatmeal (To replace bread crumbs)
1 Medium Onion, chopped
1/2 Tsp Sea Salt
1/2 Tsp Thyme
2 Cloves Garlic, Chopped
4 Tablespoons flax seed Gel (To replace eggs)
1/4 Coconut Oil
1/4 Cup sweet red pepper
1/4 cup yellow pepper
1 stalk celery sliced
1/4 tomato, diced
2 Tablespoons lemon or lime juice
1/2 cup water
1 1/2 tablespoon mixes herbs (basil, sage, parsley, cumin)
