How to Make Healthy Whole Wheat Blueberry Pancakes from Scratch
Whole wheat products don't have to be heavy and dry. These whole wheat pancakes prove that. The key is using whole wheat pastry flour. I've included some links below for where you can purchase it. ⬇️⬇️RECIPE BELOW⬇️⬇️

WHOLE WHEAT BLUEBERRY PANCAKES INGREDIENTS
3 cups whole wheat pastry flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1 cup frozen blueberries
3 eggs
3 cups milk
6 Tablespoons butter, melted
1 Tablespoon honey, optional
Pure maple syrup
STEP 1: Combine flour, baking powder and salt in a medium sized bowl. Add blueberries and stir till blueberries are coated with the flour.
STEP 2: Melt your butter in a small saucepan.
STEP 3: Beat your eggs until smooth in a stand mixer or large bowl. Add milk and combine. Slowly add your melted butter to the milk mixture.
STEP 4: Add the flour mixture to the liquid and stir just until combined. Do not overmix. Let the mixture set at room temperature for up to 30 minutes. This will aerate the batter causing it to be lighter.
STEP 5: Heat your griddle to 450°F. Once it has reached temperature, spray it with cooking spray before ladling pancake batter onto the surface. Cook the pancakes until the sides are set and you sell little bubbles on the surface of the pancake. Flip and cook for about 30 seconds more or until it's golden brown before removing. Repeat with the remaining batter.
STEP 6: Serve with butter and pure maple syrup.

Mixing Pancakes the Perfect Amount
Pancakes (yield: 1 dozen pancakes)
2 c (280g) AP flour
1/4 c (50g) maple sugar
1 tbsp (12g) baking powder
1/2 tsp (3g) baking soda
1/2 tsp (3g) fine salt
1.5 c (341g) milk
2 eggs
1 tsp vanilla extract
2 oz (57g) melted butter or vegetable oil
1. Mix all the dry ingredients together in a bowl.
2. In a separate container, whisk together the milk, eggs, and vanilla. Add in the melted butter or oil.
3. Combine the dry and wet ingredients and mix just until you can't see dry flour (there will be some lumps).
4. Scoop onto a lightly greased griddle, cook until the bottom is golden, flip, and cook until golden again.
