Today's recipe is an Easy and healthy Breakfast Recipe called Vegetable Rice flour pancakes, Rice Flour Crepes, Chilla, Vegetable Rice cheela. In this recipe, I have used carrot, potato, onion, cilantro, capsicum, etc. you can add any types of your favorite vegetables-like spinach, green peas, cauliflower, cabbage and so on.
It is made by soaking the rice & grinding into fine paste and then mixing all the veggies into the rice flour batter. It taste amazing, you can have it in dinner, lunch ,breakfast or evening snacks.

Raw Rice- 1 & 1/2 Cup
Water- 3 cups to rinse & soak
Raw Potato 1 medium
Baby Carrot- 3-4 small (2-3tbsp)
Capsicum(Green)-3tbsp
Onion-3tbsp
Capsicum(Red)-2 tbsp
Ginger paste -1 tsp
Green Chilli- 2nos
Cumin-1 tsp
Corriander/Cilantro- Handful
Salt- 1tsp
Baking soda-1/2 tsp
Oil- 1 tbsp
Water-1/4 cup

INGREDIENTS REQUIRED:
For Batter
Rice flour (चावल का आटा) – 1 cup
Potato (आलू), Boiled & Mashed – ¾ cup (160gm)
Water (पानी) – 1½ cup
Salt (नमक) – to taste
For Mixing -
Onion (प्याज़) , Chopped – ¼ cup
Tomato (टमाटर) , Chopped – ¼ cup
Green Capsicum (हरी शिमला मिर्च), Chopped – ¼ cup
Carrots (गाजर), Grated – ½ cup
Red capsicum (लाल शिमला मिर्च) , Chopped – 2 tbsp
Green Chilli (हरी मिर्च) , Chopped – 2 tsp
Ginger (अदरक), Chopped – ½ tsp
Pepper powder (काली मिर्च) – a pinch
Curry leaves (करी पत्ते), Chopped – ½ tbsp
Coriander ( कटा हरा धनिया), Chopped – ¼ cup
Eno (इनो) – 3 tbsp
Oil (तेल) – to fry
For Tadka chutney
Yoghurt (दही) – ½ cup
Mayo (मेयोनेज़) – ¼ cup
Salt (नमक) – to taste
Oil (तेल) – 1 tbsp
Mustard seeds ( राय) – ½ tsp
Curry leaf (करी पत्ते) – 1 sprig
Chilli Powder (मिर्च पाउडर) – 1 tsp

Vegetable Rice Pancakes & Best Coconut Chutney Recipe| Easy Breakfast Recipe|Soft & Fluffly Pancakes
Hey Guys,
This is a dish which needs very less preparation & very less ingredients.
Try out this delicious snack/breakfast/meal recipe & enjoy with your family.
Ingredients for Batter:
* Rice- 3/4 Cup (any type of rice will work)
* Curd - 3 Tbsp
* Boiled Potato - 1 small size
* Mix Vegetables- 1/5 Cup (all vegetables should be finely chopped or grated)
* Salt - to taste
* Black Pepper Corns - 1/2 tsp(coarsely grounded)
* Fresh Grated Coconut - 1 Tbsp
* Baking Soda- 1/2 tsp
Soak rice for few hours or for 1 hr in Hot Water. Then grind rice, curd & potato together and make a smooth paste. Add all the chopped vegetables, salt, coconut, black pepper and mix. Once mixed now add baking soda and mix.
Now on hot pan, pour a ladle full batter and cook.. cook on both sides until nice brown golden color appears.
****Rice Pancakes are ready!
Ingredients for Coconut Chutney:
*Fresh Coconut - 1 Cup (thinly sliced)
*Green Chillies - 3 to 4
*Green Coriander Leaves - handful
*Curry Leaves- few
*Roasted Gram Dal - 2 Tbsp
*Curd - 2 Tbsp
*Water- 1/4 Cup
Grind all the above mentioned ingredients in the blender jar.. once it becomes smooth, pour it out in a bowl, then add 1/2 tbsp of Lemon Juice.
****Coconut Chutney is Ready!
Serve Rice Pancakes with Coconut chutney & some Salad on the Sides.
