1 Bowl Left over Rice (Sona Masoori OR Basmati rice)
To make Sesame Masala powder:
2 tsp Black Urad dal OR White Urad dal / White lentil
1 tbsp Black Sesame seeds OR White Sesame
1/2 tsp Black Pepper corns
5 Dry Red chili (adjust according to your spice level)
1 sprig Curry leaves
For Tempering:
2 tbsp Sesame oil OR any cooking oil
1/2 tsp Chana dal / Bengal gram
1/2 tsp Urad dal
1/4 tsp Mustard seeds
2 tbsp Raw Peanuts OR Roasted peanuts
2 Dry Red chili
1/2 tsp White Sesame seeds
A pinch of Hing / Asafoetida

Easy Sesame Egg Fried Rice Recipe

This sesame egg fried rice is easy and delicious. You can make it within 10 minutes.
INGREDIENTS
2.5 cups (350 grams) of leftover rice,
1.5 tbsp of soy sauce (Amazon Link -
1 tbsp of dark soy sauce (Amazon Link -
1 tbsp of garlic chili sauce (I use sambal), optional
Salt to taste
2-3 tbsp of pork lard or vegetable oil
3 eggs
1/2 cup of diced bell pepper
1 shallot, diced
3 cloves of garlic, diced
2 tsp of ginger, diced
3-4 tbsp of roasted sesame seeds, lightly crushed (Amazon Link -
1/4 cup of diced scallion
2 tsp of sesame oil (Amazon Link -
INSTRUCTIONS
Season the rice with soy sauce, dark soy sauce, and some sambal chili sauce. Taste to adjust the flavor. All the salty seasonings are in the rice, so it should be slightly saltier than your normal taste. Later on, it will balance out with the eggs and a bit of vegetables.
Use a rolling pin to lightly crush the roasted sesame seeds. If your sesame seeds are raw, bake them in a 360 F oven for 15 minutes first.
Preheat the wok over high heat until it is smoking hot, then add the pork lard. Pour the whisked egg, and it should set immediately. Quickly break the egg into small pieces and remove it from the wok.
Add a little bit more oil and saute the minced aromatics until fragrant. Add diced red and green bell pepper and cook to your desired doneness. Add the rice and stir over high heat until you can see some grains dancing and jumping at the bottom of the wok.
Introduce the egg back to the wok. Sprinkle the diced scallions and the toasted sesame seeds. Add a drizzle of sesame oil. Give it a final toss and serve.
Ellu Sadam Recipe (South Indian Sesame Rice, Til Rice)
Full Recipe -
Ingredients
2 and ½ cups cooked and cooled rice
2 teaspoon salt
To Make Sesame Powder
3 tablespoons chana dal (Bengal gram lentil)
3 tablespoons white urad dal (split and skinned black gram)
¼ cup white sesame seeds
3 tablespoons peanuts
5-6 whole dry red chilies (stalks removed)
2 tablespoons grated fresh coconut
¼ teaspoon hing (asafetida) (skip for gluten-free)
For Tempering
3 tablespoons vegetable oil
½ teaspoon mustard seeds
½ teaspoon cumin seeds
10-12 whole curry leaves
Instructions
Make The Sesame Powder
Add chana dal, urad dal, sesame seeds, peanuts, red chilies, and coconut to a pan and dry roast over medium-low heat until brown and fragrant, stirring frequently.
Remove the pan from the heat and let the roasted ingredients cool completely.
Note – Cooling the ingredients completely is important otherwise they will release oil while grinding.
Add the roasted ingredients to a grinder or a food processor along with ¼ teaspoon asafoetida and pulse to make a fine powder.
Note – Do not grind in one go as the ingredients may get heated and release oil.
Mix The Rice
Transfer rice to a large mixing bowl.
Add the sesame seeds powder and salt to the bowl and mix well to coat the rice with the powder.
Temper The Rice
Heat oil in a small skillet over medium heat.
When the oil is hot, add mustard seeds, cumin seeds, and curry leaves, and let them crackle for 4-5 seconds.
Pour the tempering over the rice and mix well.
Serve the rice cold or heat it until warm!
Notes
Sona Masuri is the preferred choice to make Ellu Sadam. Having said that, you can use any other white short-grain nonsticky rice or basmati rice to make it.
Cook the rice beforehand and make sure it is cooled properly before stir-frying it.
Day-old cold rice is best to make Ellu Sadam.
If you want to make it using fresh rice, then cool it completely before suing.
To fasten the cooling process, spread the cooked rice on a baking tray and cover the tray with cling wrap. Refrigerate the tray for 30 minutes or freeze for 15 minutes.

Sesame seed rice or ellu sadam is very easy to make and is full of flavor. So watch and learn how to make delicious Til Sadam at home with chef Anushruti only on Rajshri Food.
Ingredients:
- 300 gms or 11/2 cup of rice
- 1 ½ tsp of salt
- 2 tsp of oil
- 750 ml or 3 cups of water
- 50 gms or 1/3 of sesame seeds
- 50gms or 1/3 of dry grated coconut
- 1 tsp of oil
- 4-5 dry red chiilies
- ½ tsp of salt
- 3tbsp of sesame oil
- ¾ tsp of mustard seeds
- 1 ½ tsp of soaked urad dal
- 3 tbsp of split cashew nuts
- 2-3 dry red chillies
- curry leaves
- ¾ tsp of yellow asafetida
Method:
- Soak rice in water for 30 minutes, then cook the rice by adding salt, oil and water.
- Roast the sesame seeds on low heat, once done transfer it into a plate.
- Roast the dry grated coconut,once done transfer it into a plate.
- Add oil, dry red chiilies in a pan and cook them until the chillies are crispy.
- Let the roasted ingredients cool down
- Then grind all the roasted ingredients into smooth powder
- Sprinkle the powder over the cooked rice and also add salt
- In seasoning pan add sesame oil, mustard seeds,
- As the mustard seeds start crackling add soaked urad dal, cashew, dry red chillies, curry leaves and yellow asafetida
- Pour hot seasoning over the rice and mix everything together.
- Til Sadam is ready to be served.
