How To make Sesame Vegetable Rice
1 c Brown rice, cooked
Unrefined vegetable oil, -as needed 3 c Thinly sliced mixed
-vegetables (whatever's -available; carrots, celery, -broccoli, squash, cabbage, -beans, mushrooms) 1/4 c Sesame seeds
1 tb Bragg's Liquid Aminos
When rice is almost ready, toast sesame seeds in a dry, heavy skillet over medium heat until they brown and smell fragrant. Set them aside in a small bowl. In the same skillet saute vegetables in 1 tablespoon oil, beginning with those that take longest to cook. You can also stir-fry them with a small amount of liquid, covered. Do not overcook; vegetables are ready when heated through. Serve vegetables over rice, sprinkled with seasme seeds and topped with liquid aminos to taste.

Cooked Rice - 1 bowl
Sesame Seeds - 2 Tbsp
Toor Dal - 1 Tbsp
Red Chillis - 5 to 6 nos.
Dry Coconut (kopparai) - 1 Tbsp
for tempering:
Oil - 1 Tbsp
Chana Dal - 1 tsp
Urad Dal - 1 tsp
Mustard Seeds - 1 tsp
Peanuts - few
Cashew nuts - few
asafoetida powder - a pinch
red chilli - 2 nos.
curry leaves - few
salt
Method:
1. Dry roast Sesame seeds, toor dal, red chillis & dry coconut
2. Let them cool and grind to powder
3. Temper chana dal, urad dal, mustard seeds, peanuts & cashew nuts, asafoetida powder, red chillis, curry leaves & salt
4. Add the rice and mix well in low flame
5. Add the masla powder and check for seasoning.
6. Finally add ghee, mix well and serve hot!

Ingredients
2 and ½ cups cooked and cooled rice
2 teaspoon salt
To Make Sesame Powder
3 tablespoons chana dal (Bengal gram lentil)
3 tablespoons white urad dal (split and skinned black gram)
¼ cup white sesame seeds
3 tablespoons peanuts
5-6 whole dry red chilies (stalks removed)
2 tablespoons grated fresh coconut
¼ teaspoon hing (asafetida) (skip for gluten-free)
For Tempering
3 tablespoons vegetable oil
½ teaspoon mustard seeds
½ teaspoon cumin seeds
10-12 whole curry leaves
Instructions
Make The Sesame Powder
Add chana dal, urad dal, sesame seeds, peanuts, red chilies, and coconut to a pan and dry roast over medium-low heat until brown and fragrant, stirring frequently.
Remove the pan from the heat and let the roasted ingredients cool completely.
Note – Cooling the ingredients completely is important otherwise they will release oil while grinding.
Add the roasted ingredients to a grinder or a food processor along with ¼ teaspoon asafoetida and pulse to make a fine powder.
Note – Do not grind in one go as the ingredients may get heated and release oil.
Mix The Rice
Transfer rice to a large mixing bowl.
Add the sesame seeds powder and salt to the bowl and mix well to coat the rice with the powder.
Temper The Rice
Heat oil in a small skillet over medium heat.
When the oil is hot, add mustard seeds, cumin seeds, and curry leaves, and let them crackle for 4-5 seconds.
Pour the tempering over the rice and mix well.
Serve the rice cold or heat it until warm!
Notes
Sona Masuri is the preferred choice to make Ellu Sadam. Having said that, you can use any other white short-grain nonsticky rice or basmati rice to make it.
Cook the rice beforehand and make sure it is cooled properly before stir-frying it.
Day-old cold rice is best to make Ellu Sadam.
If you want to make it using fresh rice, then cool it completely before suing.
To fasten the cooling process, spread the cooked rice on a baking tray and cover the tray with cling wrap. Refrigerate the tray for 30 minutes or freeze for 15 minutes.

Ingredients:
Serves 6 pax

60ml (2 fl oz) sesame oil
1 thumb-size young ginger (sliced thinly)
460g (16.2 oz or 1 lb) chicken thigh meat (cut into bite sizes)
2 tablespoons Chinese white rice wine (optional)
5 cloves garlic (sliced thinly)
A few dashes of white pepper
3 cups rice (450g or 15.9oz))
2 tablespoons oyster sauce
1 teaspoon chicken stock powder (You can use chicken stock to replace water)

This simple side dish is easy and tasty.
Chicken recipe playlist:
Main course and sides:
1 tbsp vegetable oil
1/4 cup sesame seeds
1 onion chopped
1 cup parboiled or long grain rice
2 cups chicken stock
Salt and pepper to taste
Heat oil in a skillet over medium high heat and add sesame seeds. Stir and cook seeds until they are golden brown. Add chopped onion and rice and stir for a minute or so. Add chicken broth and bring to a boil. Reduce to a simmer and cover. Cook for about 20 minutes on low heat until rice is cooked and water is absorbed.
Season with salt and pepper to taste. I sometimes sprinkle my serving with sesame oil because I love the flavour so much. My husband adds soya sauce to his.
I served mine with a sprinkle of fresh flat leaf parsley but chopped fresh coriander would be nice too.
