How To make Tomato Broccoli Chicken
4 boneless skinless chicken breast halves
1 c chopped onion
1 tbsp olive oil
1 14.5oz can diced tomatoes w/basil, garlic and oregano
2 c broccoli florets
1 c mozzarella cheese -- shredded
Brown chicken and onion in olive oil in skillet, about 3 minutes per side. Add tomatoes to skillet. Bring to boil; reduce heat. Simmer, uncovered, 5 minutes. Add broccoli; simmer 5 minutes more or until chicken is done and broccoli is tender.
Top with cheese during last 2 minutes. Serve over pasta or rice, if desired.

It is therefore preferable to choose methods that have a short cooking time.
MICROWAVE COOKING
It's the easiest way to cook it!
