Recipe: Yum Neua, or Thai Spicy Beef Salad
Beef Tenderloin 300 g
Seasoning Soy sauce 3 tbsp
Cucumber 1 halved length, sliced thinly
Tomato, 1-2 sliced thinly
Shallots 1 (big) sliced thinly
Chinese celery 2 twigs
Spring onion 2 twigs
Bird’s Eye Chili 5-6
Fish sauce (Nam Pla) 2 tbsp
Lime 2 (medium) (3-4 tbsp Lime Juice)
Garlic 6 cloves
Palm sugar 1 tbsp

Thai Beef Salad Recipe, authentic Thai food
This mouth-watering classic Thai beef salad recipe (yum nua) is made with grilled beef steak and is so simple to put together. It is a perfect salad for low-carb or gluten-free diets.
Thai beef salad (Yum Nua) is perhaps one of the most well known salads of Thailand. The grilled beef steak is tossed with cucumber, tomato, shallot, fresh chili, fragrant herbs, and a fish sauce and lime juice dressing. With this authentic Thai beef salad recipe, you can taste the full flavor of authentic Thai cuisine.
It’s important to understand the balance of sweet, salty, tart, and spicy tastes all mingled in Thai cuisines. You can use my recipe for the salad dressing first. Then, taste and adjust the amount of each ingredient according to your taste palate.

Ingredients for 4 portions as a starter
- 400g beef fillet
- 1 bunch coriander, leaves picked and roots cleaned
- 2 cloves garlic
- 2 bird’s eye chillies
- 20g palm sugar
- 1 lime
- 30ml fish sauce
- 1 punnet of cherry tomatoes, cut in half
- 1 cucumber, seeds removed and sliced
- 1/2 shallot (or red onion), sliced very thin
- Bunch mint, picked leaves
- 3 finger limes (optional)
- Fried shallots
Method
1. Start by placing a heavy based pot over medium high heat and seasoning your beef fillet well on all sides.
2. Once the pan is nice and hot, seal the beef fillet making sure you’re getting a great crust on the outside but preferably still keeping it rare in the centre. Once it's cooked, leave it to one side to rest.
3. Start working on your dressing by pounding together the garlic, coriander roots and bird’s eye chilli, then adding in the palm sugar, fish sauce and lime juice. Check the seasoning to make sure you're happy with it.
4. Start working on the rest of the ingredients for your salad picking the herb leaves, slicing tomatoes and cucumber and slicing the shallots.
5. In a bowl, dress the salad with half of the dressing.
6. Slice your rare beef fillet and dress each piece of beef with a little bit more of the dressing.
7. Arrange your salad on the plate followed by the beef slices, finger lime (if you are using them) and crispy shallots. Enjoy!

Thai Beef Salad must be the best summer dinner recipe ever! Made with delicious grilled tender beef, robust flavours and healthy vegetables it’s hard to beat. Plus it’s perfect for those following a low card diet.
If you thought it was too hard to cook, let me assure you, it’s not that hard.
For the beef you can use any cut you like, I prefer tenderloin (eye fillet) but you could use sirloin, ribeye, Scotch fillet. As it’s a salad, I personally like the tenderest meat possible so it’s easy to eat with tender salad leaves.
I used coriander or cilantro, plus mint leaves. You can also use Thai basil for that extra flavour complexity. I used brown sugar instead of the traditional palm sugar as it’s usually more of a staple, but if you can find palm, then use it. Try and get fresh limes for that beautiful flavour.
Always use it immediately, but if refrigerating for the next day, drain out the dressing and juices and add it back in before serving. You can serve it as is, or with plain cooked rice, that is of course if you’re not on a low carb diet. Enjoy Thai Beef Salad.

Thai beef salad is hands down my favorite salad! I don’t do many salad recipes but this is an absolute must! I remember when my brother introducing me to Thai food when I was younger and I thought this salad was the best thing ever! It’s made with tender steak, a rainbow assortment of veggies and the most tasty lime dressing!!
Thai Beef Salad
Ingredients
1 lb steak (flank steak, skirt steak, ribeye or New York strip)
1 head Romain lettuce, chopped
1 small cucumber, sliced
1/4 Red onion, sliced thin
1 Roma tomato, sliced
Cilantro, chopped
For the dressing
3 limes, juiced
1/4 cup fish sauce
1 tablespoon sugar
Optional: 1-2 chopped Thai chilis, or crushed red pepper flakes
Directions
Season steak with salt and pepper. Cook on a pan or outdoor according to preference. Let steak rest at least 5 minutes before slicing.
Slice thin against the grain.
Mix all the dressing ingredients together in a bowl.
Assemble the salad by combining Romain lettuce, cucumber, red onion and tomatoes in a bowl. Top with sliced steak and garnish with cilantro. Pour over desired amount of dressing and toss to combine.
