4 oz Cheddar cheese 1/4 c Butter, softened 1 tb Port or sherry 4 Green onions, finely chopped 1/2 ts Caraway seeds 1 ts Coarsely ground mustard 1/4 ts Worcestershire sauce 1/4 c Walnuts, coarsely chopped Crackers or melba toast Fresh parsley sprigs (opt) Finely grate cheese into a bowl. Add butter and mix well. Stir in port, green onions, caraway seeds, mustard and Worcestershire sauce. Mix thoroughly until well combined. Spoon mixture into a serving dish. Cover with walnuts and press walnuts down lightly into mixture. Chill at least 2 hours. Serve with crisp crackers or Melba toast and garnish with parsley sprigs, if desired. VARIATION: Add 1 teaspoon chopped fresh herbs and a few pinches cayenne pepper to taste. NOTE: This spread will keep in a refrigerator for up to 5 days.

I hate this deviled ham and potted ham but I like ham salad when I make it myself. I can barely look at this stuff in the can. But Hungry Hubby likes it once in a while and I'll do anything for him.

Switchel | Little House On The Prairie Punch
Laura Ingalls Wilder called it Ginger Water in her book The Longest Winter - but I'm calling it Little House On the Prairie Punch!
3 TBSP Ginger Juice 3 TBSP Apple Cider Vinegar Juice of 1 Lemon 1/4 cup sugar 4 cups water
Grate about 1/3 cup of fresh ginger. Use a cheesecloth to squeeze out the juice. Combine lemon juice, ginger juice and apple cider vinegar together with 1/4 cup sugar. Add 4 cups water and stir until sugar dissolves. Chill for 2-3 hours to get it nice and cold. Stir again before pouring yourself a big glass on a hot summer day!
This is also called Switchel or Haymaker's Punch. It's also considered an old fashioned energy drink because of the apple cider vinegar and ginger benefits.
The switchel recipe / ginger water recipe I'm using is adapted from Laura Ingalls Wilder's book The Long Winter. Ma made this for Pa and the family as they were getting hay ready on a hot August day in preps for the winter.
