How To make Tangerine Peel Chicken
1 lb Chicken
1 ts Ginger (minced)
1 Scallion (minced)
2 Dried Chillies
1 Dried Tangerine Peel
Crumbled Oil for deep frying
SEASONING A:
1/2 ts Salt
1/2 ts MSG (optional)
1/2 ts Dark soy sauce
1/2 ts Sam Shu wine
2 ts Cornstarch
SEASONING B:
1 1/2 ts Sugar
1/2 ts MSG (optional)
1/2 ts Dark soy sauce
2 ts Light soy sauce
1 ts Shao Hsing wine
2 ts Black vinager
3 dr Sesame oil
THICKENING SAUCE:
1/2 ts Cornstarch
1 tb Water
Wash chicken and cut into 2cm (3/4 inch) cubes. Mix thoroughly with the minced ginger and scallion, then add the Seasoning A ingredients and marinate for 15 minutes. Mix Seasoning B ingredients and set aside. Heat the wok until smoking, add the oil and when very hot deep fry the chicken pieces for 1 1/2 minutes, until golden. Drain chicken pieces, discard most of the oil. Reheat the wok and stir-fry the chillies and crumpled tangerine peel until they darken. Add chicken pieces and stir. Add Seasoning B and the Thickening sauce and stir-fry until the seasoning coats the chicken. Serve.

Tangerine chicken originated in the Hunan Province of China and its Chinese name literally translates to “dried citrus peel chicken.”
Learn how to cook this quick recipe for ‘Tangerine Chicken’ in just a few easy steps.
| Cooking time: 30 mins |
Ingredients:
‘Prep the Chicken’
- Boneless Chicken thighs | 1 Kg
- Flour | 300 grams
Coat the Chicken in flour
‘Corn Starch Mixture Prep’
*save some of the mixture separately for the sauce too*
- Flour | 4 tbsp
- Corn Flour | 100 grams
- Salt | 1 tsp
- Paprika Powder | ½ tsp
- Water | 1 cup
- Egg | 1
Whisk it like you mean it
- Vegetable Oil | 2 tbsp
Add in the Chicken & coat generously
Drop into a pan with Oil for Frying
Deep Fry until its lightly puffed and golden brown
‘Prep the Tangerine Sauce’
- Orange Juice | 200 ml
- Vinegar | 1 tbsp
- Sesame Oil | 1 tsp
- Soy Sauce | 4 tbsp
Stir until it thickens
- Oil | 3 tbsp
- Chilli Flakes | ¼ tsp
Fry it up
- Garlic | 1 ½ tsp (chopped)
- Ginger | ½ tsp (chopped)
Fry for 3-4 minutes
- Sugar | 2 tbsp
- Brown Sugar | 3 tbsp
Pour in the wet mixture
Add the saved corn starch mixture
Drop in the fried chicken
Fry for 3-4 minutes
Plate it, garnish with toasted sesame, spring onions & serve with rice.
