How To make Tangerine Shortbread
2 c Unsalted butter; softened
1 c Sugar (superfine)
3 tb Frozen tangerine juice
Concentrate; thawed 1 tb Fresh tangerine or orange
-peel Orange part only 4 1/2 c All-purpose flour; sifted
Cream butter and sugar until light and fluffy. Stir in tangerine juice and peel. Add flour; mix well. Divide dough in half. Press each portion evenly into greased and flour 8-inch round cake pan. Decorate edges by crimping or pressing with tines of fork. Prick with fork to score top into pie-shaped wedges. Bake on center rack in preheated 325-degree oven 20 to 25 minutes, until shortbread is golden and edges are light brown. Remove from oven and cut into wedgesalong fork scored lines. Cool completely in pan. Makes 32 cookies. -----

50 g de beurre mou (3 tbsp + 2 tsp)
1 oeuf battu
1 pincée de sel
1 cuillère à café de bicarbonate de soude

1 cuillère à café de fleur d'oranger
3 cuillères à soupe de yaourt nature ou crème fraîche
310 g de farine ordinaire (1 cup + ¾ cup + 3 tbsp)
1 mandarine entière et 1 mandarine sans la peau (bio de préférence)
2 cuillères à soupe de miel
2 cuillères à soupe de maïzena

Delicious tangerine and poppy seed cookies. Window cookies with tangerine jelly.
Recipe
Poppy seed shortbread
1 cup (250 ml)unsalted butter room temperature
12 cup sugar
1 tbsp. grated tangerine zest
2 tbsp. poppy seed
2 cups all purpose flour
12 tsp salt
Tangerine jelly
125 ml (12 cup) Tangerine juice.
1 cup sugar
1 tsp lemon juice
1tbsp+ 1tsp liquid pectin (I didn't have liquid pectin so I used powder. My jelly was a little liquidy but fine at the end)
Preheat oven to 325F (163C )

For the Jelly combine juice, sugar, lemon juice and pectin in the pot.
To make tangerine juice I put tangerines in the blender and then strained the juice.
Stir to dissolve sugar and bring to a boil. Let stand until set for 30 min. Stir to break up.

For the shortbread combine butter and sugar and beat until fluffy. Add poppy seed, zest, flour and salt.

Roll the dough on the floured surface 5 mm thick. Cut cookies preferred shape. Cut window with the smaller cutter in half of them. Place in the fridge for 30 min or freezer for 15 min.

Bake for 13-15 min (it took me longer).
Cool cookies completely.

Spread about 1 teaspoon on the bottom cookie and place cookie with the window in top. Fill the whole with extra jelly.
