RECIPES
Crust (0:36)
-270 g Flour
-7 tbsp cold butter
-7 tbsp cold shortening
-1/3 cup Sugar
-3-4 tbsp Water
*TIPS
-Use a food processor for easy blending!
-Make sure your butter and shortening are COLD when adding
- Add 3-4 tbsp of water (varies depending on your climate) If dough is sticky use 3, If dough is dry use 4
-As needed , use minimal amounts of flour on surface (sprinkle)
Cinnamon Apple Filling (1:54)
-4 medium sized Golden Delicious Apples, or 3 large
-2 tbsp Butter
-1 tbsp Flour
-1/2 small Lemon
-2/3 cup Sugar
-1/2 tsp Cinnamon
*TIPS
-Golden Delicious Apple bake up quickly and have a sweet flavor! You can use your favorite of choice, such as honey crisp , however you can never go wrong with the Golden Delicious
-Caramelize your apples when frying in pan for a delicious taste! The apples and juices will be browned and thickened when done
Assembling the Pies (3:30)
*TIPS:
-A 2.5 inch circle cutter was used to cut the bottom of the crust
- A lattice cutter wheel cut the strips for the lattice/ cage top
-Place a spoonful of the COOLED cinnamon apple filling in the center of each pie
- * The dough is delicate and best handled cold. I recommend to place in the fridge when not using- Divide dough into sections and keep the dough in the fridge until needed for the next pie!
Salted Caramel (4:59)
- 1 1/4 cup Sugar
-1/3 cup Water
-5 tbsp Butter
-2/3 cup Heavy Cream
-Salt to taste
* TIPS
- Do NOT Stir the sugar and water. This will cause your caramel to crystallize
- Use a damp pastry brush to clean the edge of the pot in case sugar crystals form. (Do not allow it to come in contact with the sugar mixture)
-Monitor your caramel at all times! Whisk in the microwaved butter and cream when the mixture is an amber color. If your caramel is dark, this will result in a more bitter taste
- Melt your Butter and Heavy cream in the microwave prior to whisking in with the caramel. Be careful and use caution , this splashes! (:
- Allow your caramel to cool for at least 30 mins. This is needed for your Caramel to thicken before drizzling! To speed up the process, transfer the caramel to a pot (take it out of the warm pot and put in a clean one that was not in use)
