How To make Sweet and Sour Cabbage Soup
1 Head cabbage
2 lg Cans crushed tomatoes with
Added puree (or some equivalent) 1 lg Onion
5 Cloves garlic
Juice of 2 lemons or about 1/4*cup balsamic or wine
Vinegar 1/2 c Brown sugar
1 2 talbespoons of grated
Fresh ginger Salt and pepper to taste ~ slice cabbage thinly to create cabbage strips, - half onion and slice thinly to create half rings - crush, slice or dice garlic - grate ginger Put everything in a large soup pot and add water to cover plus a little more. Bring to boil, then reduce heat, cover, and simmer for 2-3 hours (longer the better). Don't be afraid to add more tomato, sugar, or vinegar if you like it more tomatoey, sweeter, or more sour. Taste a couple hours into the cooking for adjustment. The cabbage will have imparted its flavor and the tomatoes will have mellowed. You can also add rice during the last 45 - 30 minutes (also add the more water appropriate for the amount of rice you add. For example, I added 3/4 cup brown rice and 1 1/2 cup water the last 40 minutes) Or add a can of white or gabanzo beans. (Again these won't need cooking, so just add at the end) [If you're not a vegetarian, you can use b**f or ch*ck*n stock. This delicious sour cabbage pork soup is perfect as meal prep or as a homemade yummy soup. This sour cabbage soup or kislye shchi is a traditional Russian soup. I used to have it a lot as a child, and this soup has many variations all across Eastern Europe. This recipe makes 8 meal prep portions. You can freeze the soup for up to to 2-3 months or enjoy it within 3-4 days in the fridge.
Sinful Sweet & Sour Cabbage Soup
For those who have never had Sweet and Sour Cabbage soup, this may sound very weird. For those of us who have tried it, we know how addictive it can be.
Ingredients:
1 Small head of Red Cabbage, Shredded
6-8 cups Vegetable (or chicken or beef) broth
1 Large Sweet Onion, Roughly Chopped
3 medium carrots, grated
3 medium red potatoes (or any other kind), cubed into 1/2 in. or 3cm pieces
1 heaping Tbs Garlic, minced (or approx. 3 cloves of garlic)
1/2 cup dark brown sugar
1/2 cup apple cider vinegar
Fresh black pepper to taste
Salt to taste (or approx. 1/4 cup soy sauce)
4 Tbs butter
1 Bay leaf, whole
1 Tbs Sour Cream (optional)
1) Sweat the onion in a large pot in the butter over medium heat. Approximately 10 minutes. Do not let the onion brown. Add garlic and cook for 1-2 minutes.
2) Add 1.5 cups of stock to your mixture. Add other vegetables, bay leaf, and enough stock to cover everything. Add brown sugar and Apple Cider Vinegar. Bring to a light boil.
3) Add your cabbage and cover until the cabbage reduces significantly in size (approx 10 mins). Add rest of stock (and a little water if necessary). Stir and season to taste with pepper and salt (or soy sauce). Cover again, and bring to a simmer. Allow to simmer, covered, for 30-40 mins. Check seasoning and then remove from heat.
4) Ladel into a wide-bottomed bowl and top with sour cream if desired.
5) Enjoy!
This is really one of my most favorite dishes to make, and all-in-all its quite simple and inexpensive at the same time. Total cost of ingredients for this was about $20 USD, and it makes enough for approximately 12 portions. Hope you all enjoy :)

- fermented cabbage
- pork
- smoked sausages
- smoked pork (ribs or knee)
- mushrooms
- red paprika powder
(sometimes dried plums, smoked bacon, chunked potatoes, etc.)
Beware of using salt, smoked pork and fermented cabbage are already salted enough, and even be careful with using spices as well
