How To make Sweet Potato Bread
2 Env active dry yeast; 1/4 oz
-each 1/2 c Warm water; about 110~
1/4 c Sugar
1 pn Salt
1 pn Fresh ground pepper
3 tb Butter; melt
2 Eggs; beaten
1 sm Sweet potato; bake, peel,
-mash 3 1/4 c + 1 tb flour
1/4 c Raisins
2 tb Butter
Preheat the oven to 350~. Lightly grease a mixing bowl and baking sheet. In a mixing bowl, whisk the yeast and water together, until the yeast dissolves. Add in the sugar, salt, pepper, and butter. Mix well and let rest for 15 minutes. Stir in the eggs and sweet potatoes. Mix the flour and raisins together. Fold in the flour, 1/2 cup at a time, working with your hands until all the flour is incorporated. Form the dough into a small ball and sprinkle the dough with the remaining tablespoon of flour. Place the dough in a lightly oiled bowl, turning the dough once to cover with the oil. Cover the bowl with a clean cloth and let rise until doubled in size, about 1 1/2 hours. Punch the dough down and roll into an oval loaf about 8x3". Place the loaf in the center of the prepared baking sheet. Cover and
let rise until double in size, about 45 minutes. Bake the bread for about 40 minutes, or until golden. Remove the bread from the oven and transfer to

Let's make sweet potato bread✨ It's moist, soft and oh-so-satisfying. It's the perfect snack anytime of the day ????
9x5 loaf pan
Coconut Oil 1/2 cup (105 g)
Sugar 3/4 cup (180 g)
Eggs 2
Coconut Milk 1/3 cup (100 g)
All Purpose Flour 1 3/4 cup (290 g)
Baking Soda 1 tsp
Salt 1/4 tsp
Cinnamon 1/2 tsp
Nutmeg 1/2 tsp
Mashed Sweet Potato 1 1/2 cup (14 oz before cooking)
1. Peel and dice the sweet potato. Steam over medium high heat for 20 minutes.
2. Preheat the oven to 350 F. Line a loaf pan with parchment paper.
3. In a large mixing bowl, whisk coconut oil and sugar together. Add eggs and mix; add coconut milk and mix well.
4. In another bowl, combine the dry ingredients: flour, baking soda, salt, cinnamon, and nutmeg, mix well. Check the sweet potato, mash and set aside.
5. Stir the dry ingredients into the bowl of wet ingredients, mix until just combined. Fold in the mashed sweet potato.
6. Pour the batter into a loaf pan, lightly drop the pan on the counter once to force out the air bubbles. Bake for 1 hour. When the loaf is done, insert a toothpick in the center, it should come out clean. Let cool for 30 minutes before slicing. Serve with coffee, or tea, and/or ice cream ????
Substitutions: use any cooking oil or melted butter in place of coconut oil; use milk, heavy cream, plant based milk or even water in place of coconut milk.

No-Knead Sweet Potato Bread / Super Soft and Delicious/ Eggless Bread Recipe
This easy no-knead sweet potato bread is fluffy soft, and tastes slightly sweet with a lovely yellow color.
No-Knead Sweet Potato Bread (1lb./450g)
(1 loaf )
Ingredients:
1/2 cup (130g) steamed sweet potato, room temperature
2 Tbsp (30g) sugar
3/4 cup (180ml) milk, room temperature
1 tsp (3g) instant yeast
2 cup (300g) bread flour
1/4 tsp (2g) salt
1 Tbsp (15g) grapeseed oil / melted butter
(350°F/180°C) bake for 25-30 minutes

Method:
1. Prepare and weight all of the ingredients.
2. In a bowl, add steamed sweet potato. Mash it.
3. Then add sugar and stir together.
4. Add milk and yeast, and then stir together.
5. Add flour and salt. Use the spatula to mix until it roughly becomes a sticky dough.
6. Add oil; mix until oil is full absorbed.
7. Cover and proof the dough for one hour, or until the dough doubled in size
8. After one hour, gently deflate the dough.
9. Then transfer the dough onto a lightly floured surface.
10. Fold the dough couple times, and then divide the dough in three pieces.
11. Shape each piece into a ball, and then cover and rest for 15 minutes.
12. Roll the dough balls into into cylindrical shape. Place them in a loaf pan (1lb./450g), seam-side down.
13. Cover and second proof the dough for 60 minutes, or until they become puffy.
14. Towards the end of the fermentation time, preheat the oven to 350°F/180°C
15. Brush the loaf with milk and bake it for 25 to 30 minutes, or until it's golden brown on top and a digital thermometer inserted into the center reads at least 190°F/88°C.
16. Remove the loaf from the oven and then carefully transfer it to a rack to cool completely.
Notes:
* Check the loaf after 15 minutes and tent with aluminum foil if it's browning too quickly.
* I like it best served warm, with a good slathering of butter and a cup of hot coffee.
* Store the bread, well-wrapped, at room temperature for 2-3 days. Freeze for longer storage.

Recipe:
2 medium sweet potatoes
2 room temperature eggs
1/4 cup of evaporated milk
4 tbsps of butter
1 cup of sugar
3 tbsps of flour
1 or 2 tsps of vanilla extract
Sprinkle of cinnamon
Bake sweet potatoes until soft on 350 degrees.
Mix all ingredients well and add to a buttered dish.
Bake on 350 degrees for 35 to 40 minutes. Let cool and enjoy!
